3 Simple Steps to Steam/Froth Milk In The Microwave

skim or 1 percent milk

1.Pour milk into small or medium mason jar. Make sure you only fill half way.  (You need the milk to have room to froth and puff up)2.Put the lid on the jar tightly and shake, shake, shake! (About 20 to 30 seconds should do.)3.TAKE OFF LID, don’t forget to do this step. Place opened jar in the microwave for 30 seconds. You have steamed frothy milk!

This Hazelnut Pie has the perfect combination of chocolate, espresso and hazelnut. Starting with an Oreo espresso cookie crust, espresso ganache, a layer of hazelnut cookie crunch, Nutella mousse, chocolate whipped cream and lastly regular whipped cream creating a beautiful coffee colored gradient as you cut through the pie.

Hazelnut Pie

Oreo Cookies, crushed to fine crumbs

espresso powder

tbsp salted butter, (melted)

½ cup + 2 tbsp heavy cream

chocolate chips

salted butter

hazelnuts

chocolate graham crackers (8 full sheets), crushed to fine crumbs

tbsp sugar

oz cream cheese, (softened)

sugar

tsp vanilla extract

Nutella chocolate hazelnut spread

¾ cup + 2 tbsp heavy cream

heavy cream

tbsp sugar, (divided)

tbsp cocoa powder, (plus more for decoration)

To make the crust combine the cookie crumbs, espresso powder and melted butter. Press into a lightly greased deep-dish pie dish. Bake for 10 minutes at 350 degrees. Cool completely before filling.

To make the espresso ganache heat the heavy cream and espresso powder over medium-low heat until it starts simmering. Put the chocolate chips and butter in a bowl and pour cream over top. Allow to sit for a minute to melt and then whisk until smooth. Pour into the pie crust and refrigerate until set.

To make the hazelnut crunch, toast the hazelnuts on a baking sheet for 15 minutes at 350 degrees. Allow to cool and then chop or pulse in a food processor until coarsely ground. Stir together the ground hazelnuts, graham cracker crumbs, sugar and melted butter. Lightly press mixture onto a lined baking sheet and bake at 350 degrees for 12 minutes. Set aside to cool. Reserve 1/2 of the mixture for decorating the pie and crumble the rest over the ganache layer.

To make the chocolate hazelnut mousse beat the cream cheese, powdered sugar, espresso powder and vanilla extract in a large mixing bowl. Add the Nutella and beat until fully incorporated. In another bowl beat the whipping cream to stiff peaks. Gently fold the whipped cream into the chocolate mixture until no traces of the white cream remain. Spread mousse over the hazelnut crunch layer. Refrigerate while making the next layer.

To make the whipped topping, whip the heavy cream to soft peaks. Add in 2 tablespoons of sugar and whip to stiff peaks. Set aside 1/3 of the whipped cream. Add the cocoa powder, espresso powder and remaining sugar to the remaining 2/3 of the whipped cream. Mix just until combined. Spread the chocolate espresso whipped cream over the mousse and then the white whipped cream on top.

Garnish the pie with the reserved hazelnut crunch and dust with cocoa powder. Refrigerate until ready to serve. To create a pattern on top of the cake, lay a piece of lace on top of the whipped cream and sift cocoa powder over top. Gently lift the lace straight up to reveal the design.

coffee creamer

chocolate drink mix (like Nesquik)

instant coffee granules

Splenda

tsp cinnamon

tsp ground nutmeg (or additional cinnamon)

Mix all the ingredients together and store the mix in an airtight container.

To prepare, place 3 tablespoons in a cup and add 8 ounces of hot water. Stir.

Skip that overpriced, café-bought cappuccino and make this homemade and handmade version instead.

Homemade (And Handmade) Cappuccino Recipe

Put the coffee grounds in a French press. Add the hot water. Let the coffee steep for 4 minutes, then push the plunger down and pour into a mug.

While the coffee is steeping, pour the milk into a small pot and heat to medium-high. Heat the milk to 140-150 F — use a food thermometer to test the temperature.

Pour the hot milk into a large container (ideally one with a spout) and use a handheld frothing wand to froth the hot milk, which should take 3 minutes.

Pour the frothed milk into the mug on top of the coffee. It should be very foamy on top. Add sweetener now if needed. Sprinkle with cinnamon and serve.

great cappuccino is a delight available to discerning coffee lovers, right in their own kitchens.  It takes some practice with water, steam and foam, along with the right equipment on your countertop.  You’ll want an espresso machine with a built-in steaming wand. And of course, illy coffee on hand as your foundation.

Cappuccino

Espresso coffee (25 milliliters)

milk (85 ml)

Pour cold milk into a metal steaming pitcher, about a third full

Release steam from the steaming wand for two seconds to eliminate any residual water

Dip the tip of the steaming wand into milk and start frothing. As the foam rises and the volume of milk increases, lower the pitcher, always keeping the tip submerged and tilted to create a vortex. Do not mix unnecessarily (i.e. let the natural circulating action do the work)

Continue steaming until the milk reaches 65 degrees (check via probe-style kitchen thermometer) and its volume doubles

Tap the base of the pitcher firmly on the countertop to compress the foam

Prepare an espresso in a large cup (ideally, a cappuccino cup)

Pour the foamed milk directly into the cup, first aiming for the center, then continuing in a circular motion out toward the rim

Operate the steam one more time to eliminate any remaining milk residue

Prep espresso and get it ready to brew. 

Steam milk. With a cappuccino, you want a decent amount of pretty stiff foam so that it&#8217;s equal parts steamed milk and foam.

Brew espresso. Add sweetener (if using) to your cappuccino mug and brew espresso right over top. 

Pour steamed milk into mug, finishing with the foam. Dust with cocoa powder if desired.
