Easy Caprese Skewers

Tbsp. Organic Extra Virgin Olive Oil

Tbsp. Tuscany Spice Blend

pkg moz.zarella cheese pearls

pkg cherry tomatoes

6-8 basil leaves, sliced

pkg short bamboo skew

Preparation

PLACE moz.zarella balls, pepperoni slices, and cherry tomatoes in a medium bowl.  DRIZZLE with 2 Tbsp. Organic Extra Virgin Olive Oil and 2 Tbsp. Tuscany Spice Blend.  TOSS to coat.  PLACE on skewers in order: 1 basil leaf, 1 pepperoni slice, 1 cherry tomato, 1 moz.zarella ball.  SERVE on a platter creating a unique presentation!

Light and delicious Eggplant Caprese combines a classic caprese salad with grilled eggplant. This is the best summer dish when tomatoes and eggplant are in season.

Italian Grilled Eggplant Caprese

medium/large eggplant (I used the round eggplant)

salt

large tomatoes (ripe but firm or 10-12 cherry or grape tomatoes)

oregano

basil leaves (chopped)

mozzarella

olive oil

balsamic vinegar

Slice the eggplant crosswise, thin but not too thin. Place in a large bowl and toss with 1-2 teaspoons of salt. Let sit 20-30 minutes. Do not drain.

Using a pan grill or bbq grill the eggplant on both sides.

In a medium bowl combine the tomatoes, oregano, salt, basil, mozzarella and olive oil.

Place the grilled eggplant on a large plate and top with the tomato mixture. Add some fresh basil leaves before serving. Enjoy!

individual cherry tomatoes

mozzarella pearls

Arrange

Start by adding two mozzarella pearls to each skewer. Follow with a basil leaf, folding it in half if it's large. Next, add a cherry tomato, then another basil leaf. Finish by adding two more mozzarella pearls on top.

Repeat

Repeat this process until all your ingredients are used up.

Serve

Give your skewers a generous drizzle of balsamic glaze, then sprinkle some freshly cracked black pepper on top for extra flavor. Serve and enjoy!

Caprese Skewer Recipe

mozzarella cheese cubes/balls

basil leaves

cherry tomatoes (, halved)

Balsamic Glaze

toothpicks

pepperoni

croutons

Layer one each of the 16  1-inch mozzarella cheese cubes/balls, 16 basil leaves and halved 16 cherry tomatoes on each toothpick. Add a 8  large croutons to half of the skewers. Add 8  thick slices pepperoni  to the other half, using them as a base to stand them up. 

Before serving, drizzle with the 2 tablespoons Balsamic Glaze.
