Tropical Carambola fruit is widely known as starfruit and makes a great Carambola and Strawberry Jam.  If you live in the south or have a carambola tree dropping fruit all over the place make jam with the ripened carambolas. Homemade carambola jam is a delicious tropical jam with an unique flavor.

Carambola and Strawberry Jam

carambola (sliced)

strawberries (sliced)

sugar

lemon juice

liquid pectin

butter

Prep

Wash and remove any blemishes from the carambola fruit.

Slice

Slice them and the remove all seeds before putting the fruit in the pot.

Wash

Add the sugar into the large pot with the fruit and place on the stove on a medium heat.

Stir

Stir the fruit and sugar with a wooden spoon to get the fruit juices flowing.

Add the lemon juice and butter or margarine to the pot. The butter or margarine will help cut down on foam.

Stir again

Melt

Allow the sugar to melt completely on the medium heat. You don’t want the sugar crystals to burn from too high a heat at this point.

boil

Once the sugar has melted turn the heat up to medium-high, carefully stirring occasionally and bring to a rolling boil.

Thicken

Add the liquid pectin and bring to a rolling boil once again.

Cook

Cook fruit mixture for one full minute using a timer.

Remove

Immediately once the minute is up remove the pot from the heat to your countertop. Wait until the mixture settles down and skim the foam from the top with a large spoon.

Fill

Using a ladle and a wide mouth funnel fill your jars leaving 1/4 of headspace.

Wipe

Wipe the rims of the canning jars with a damp paper towel and put the flat lid on.

Cover

Process

Continue filling all your jars and process in a boil water bath for 10 minutes.

Dehydrated Star Fruit is an easy way to preserve fresh carambola fruit for a sweet snack. Star fruit chips can be enjoyed as a dried fruit snack. This tropical fruit has a short season and by dehydrating the fresh fruit you can enjoy star fruit all year long.

Dehydrated Star Fruit

medium to large Star Fruit (carambola)

water

Load

Place the sliced star fruit pieces on a dehydrator tray. Do not let the fruit slices overlap or touch or they will stick together as they dry.

Fill all of the drying trays with the sliced star fruit. Stack the drying trays on top of the dehydrator base and place the lid on top of the last tray. Turn the dehydrator on. If using a dehydrator that has an adjustable temperature setting turn it onto 135 F.  When drying at 135 F. it will take between 5 to 12 hours to completely dehydrate star fruit slices.

Dehydrate

Dehydrate the star fruit until all of the pieces are completely dry to the touch. The fruit will be slightly bendable when done.

Cool

Completely cool the dried star fruit slices before storing the dehydrated star fruit in an airtight container. 

Condition

Conditioning the dehydrated star fruit is recommended.

Store

Store the dried star fruit pieces in an air tight container or glass mason jar.
