Gooey Caramel Stuffed Brownies Recipe - Easy caramel brownies from scratch with ooey gooey centers. This brownie bars recipe is unbelievable!

Gooey Caramel Brownies

Preheat the oven to 375 degrees F. Line a 9 X 13 inch baking dish with parchment paper or foil.

In a large mixing bowl combine sugar, flour, cocoa powder, and salt. Stir well. Then whisk in melted butter, eggs, and vanilla extract. Finally, stir in the chocolate chips.

In a small sauce pot combine the sweetened condensed milk, unwrapped caramels, and salt. Set over medium heat. Stir until the caramels have melted into the condensed milk. Then remove from heat.

Spread half the brownie batter in the prepared baking dish. Pour the caramel over the batter and level out evenly. Then spread the remaining brownie batter over the top of the caramel.

Bake for 40-45 minutes, until a tooth pick inserted into the center comes out clean. Cool completely before trying to cut. Once cool, lift the entire sheet of brownies out of the pan by the edges of the parchment paper. Cut into 24-30 pieces.

Better than anything bars are just in time for fall. Make them for those after school snacks, date nights, or even during a game.

Caramel Brownies are a deliciously decadent dessert oozing with caramel, encased in a moist brownie and topped with chocolate chips and pecans.

Preheat oven to 350°F. Prepare a 9X13 inch baking dish by lining it with a double layer of aluminum foil and spray it with nonstick cooking spray.

Combine 2 cups of the chocolate chips with the butter, in a microwave safe bowl, and microwave in 1 minute intervals at 50% power, stirring between intervals, until melted. Stir in sugar, eggs, and vanilla until incorporated. Add flour and salt just until combined.

Pour half the brownie mixture into the prepared pan. Bake for 20 minutes. Take it out of the oven leaving the oven on and allow to cool for 20 minutes.

In a microwave safe bowl, add the caramels and cream. Microwave for 30 seconds intervals, at 50% power, stirring between intervals, until melted (watch mixture carefully-it can easily burn-low heat is imperative!). Stir half the pecans into melted caramel.

Evenly pour melted caramel mixture over partially baked brownies. Spoon the remaining brownie batter over the top of the caramel layer and spread it out with an offset spatula. Sprinkle top with remaining chocolate chips and remaining pecans. 

Return to oven for 22 minutes. Allow to cool completely in baking dish, set on a wire rack, then refrigerate 2 hours before cutting.

To serve, lift out of the pan using the edges of the foil and cut into individual portions.

No-Bake Caramel Brownies

dates ((soaked in hot water, if they're dry))

tsp vanilla extract (or vanilla bean)

+ 1 Tbsp flaxseeds

peanut butter (or almond flour)

maple syrup (or a different liquid sweetener)

coconut milk

sugar coconut sugar)

dairy-free chocolate chips (or dark chocolate (chopped))

coconut oil

First, process the whole flax seeds into a floury consistency in an electric coffee/spice grinder or small blender jug.

Then, mix all the dry ingredients in a food processor, before adding the dates and vanilla extract.

Process again until it forms a dough that sticks together when pressed between your fingers. This can take a few minutes. If it&#39;s still too dry, add more dates or a small amount of maple syrup.

Next, line a 6-inch square baking pan (double the recipe for an 8 or 9-inch pan) with lightly greased parchment paper, leaving a 2-inch overhang on both sides. Transfer the dough to the prepared baking dish, pressing it down into an even layer.

Brownie Layer

Transfer the caramel ingredients to a saucepan and bring to a boil, then immediately reduce to a simmer and whisk often, for 10-15 minutes, until the mixture thickens.

Pour the caramel layer over the brownie base and transfer it to the freezer for 30 minutes.Alternatively, make an even healthier date caramel sauce. The full ingredient amounts and instructions are in the recipe notes.

Caramel Layer

Use a warm water bath or double boiler (a bowl set over a pan of simmering water) to melt the chocolate and coconut oil. Stir until smooth and melted.

Pour that over the caramel layer and return to the freezer for 5 minutes.

Finally, cut the vegan brownies into bars (using a hot knife is best), and enjoy!

5 stars on flavor!! Wow this was truly delicious! 
First, it was easy to make.   
As I was making this, I had a bite of the brownie layer and was concerned bc on its own it wasn’t that great but once all the layers came together, it was truly delicious!  My boyfriend is a tough critic, a super foodie, and he had 3 servings bc he couldn’t stop eating it!  
My ONLY issue is that the caramel oozes out especially while cutting it.  So it was a bit messier than expected.   But I’ll definitely make it again!  It’s going on my list of favorites!

I made these for a baby shower, I’m vegan and some of the other ladies are.  They were a huge hit!  I made the date caramel and it was delicious.  Making them again today, just because. 😁

My God, these are delicious! And so easy to make. Used flour made from oats instead of almonds or Peanuts as I did not have anything else, worked just fine. I think it's unnecessary to freeze them, as we'll have finished them very quickly :-)

I made these and they were delicious!  I made the coconut sugar version; they were a little too sweet for me so what I did is to cut them as little bite pieces and topped them with almonds; everybody loved them! I'm planning to make the healthier version (with dates) next time. Thanks! Awesome!

All I have to do is melt the chocolate, but I can already tell this recipe is a hit!!! I used tahini in the caramel layer and it worked beautifully.

 Preheat oven to 350. Line a flat plate with parchment paper and coat with cooking spray. Line an 8&#215;8 square baking pan with parchment paper and coat with cooking spray.

Make that caramel

place the sugar in a small saucepan over medium high heat. Stir frequently &#8211; the sugar will form clumps and eventually become smooth. Remove from heat. Add butter and stir in. Add cream and stir in. Return to heat &#8211; let it get smooth and bubbly for another few minutes. Pour the caramel on the parchment-lined plate. Freeze for 20-30 minutes to solidify.

Brownie time

Melt the chocolate and the butter (microwave or double boiler). Whisk in the sugar. Whisk in the eggs and vanilla. Whisk in the flour and salt.

Caramel meets brownie

Cut the cooled caramel into small squares. Stir most of them into the brownie batter and transfer to the pan. Arrange the last few caramel pieces on top of the brownies. Bake for 30 minutes (more or less to taste). Cool in the fridge or freezer for easier cutting. FALL IN LOVE!

Caramel Fudge Brownies are a rich and decadent layered dessert, with caramel and chocolate chips inside of the fudgiest brownies ever!!

Caramel Fudge Brownies (Fudgy Chocolate Recipe)

unsalted butter

baking powder

Kraft caramels

evaporated milk

Preheat oven to 350°F. Line a 9x13 baking dish with parchment paper, set aside.

Unwrap caramels and place in a saucepan with the evaporated milk. Heat over medium, stirring frequently, until caramels are fully melted and incorporated with the milk. (5-10 minutes)

Meanwhile, place butter in a large microwave safe mixing bowl, melt completely.

Add sugar, cocoa, vanilla and eggs. Whisk to combine well. Add remaining ingredients. Whisk until completely combined, but do not over mix.

Spread half of the brownie batter into prepared baking dish.

Spoon melted caramel over the brownie batter and use a silicone spatula to spread as best you can without mixing caramel into the brownie base.

Spoon the remaining brownie batter over the caramel layer.

Bake for 25 minutes or until a toothpick comes out clean. Allow to cool completely before cutting.

Brownies will keep at room temperature for 3-4 days or in an airtight container in the refrigerator for up to one week. Freeze for up to 3 months.

I used milk in this recipe, and it came out absolutely lovely. They were chewy, moist, and VERY delicious. I am going to keep this recipe in the front of my dessert book!

Semi-Sweet Chocolate Chips

Powdered Sugar ((optional))

Preheat the oven to 350 degrees.

In a large bowl, mix together cake mix, 1/3 cup evaporated milk, melted butter and pecans. Stir together until totally combined. Mixture will be very thick.

Press half the mixture into a well-greased parchment lined 9 x 9 inch square baking pan. Bake for 8 to 10 minutes. Remove the pan from the oven and set aside.

In a double boiler (or a heatproof bowl set over a saucepan of boiling water) melt caramels with additional 1/2 cup evaporated milk. When melted and combined, pour over the brownie base. Sprinkle chocolate chips as evenly as you can over the caramel.

Turn out remaining brownie dough on the work surface. Use your hands to press it into a large square a little smaller than the pan. Use a spatula to remove it from the surface, then set it on top of the caramel and chocolate chips.

Bake for 20 to 25 minutes. Remove from pan and allow to cool to room temperature, then cover and refrigerate for several hours. When ready to serve, generously sift powdered sugar over the surface of the brownies. Cut into either nine or twelve helpings, and carefully remove from the pan.
