(60 milliliters) extra virgin olive oil

onions,

tsp brown or white sugar

vinegar

tomato paste

bacon rashers

(150 grams) mayonnaise

garlic clove, crushed

Dijon mustard

herbs

English muffins, halved, toasted

butter lettuce leaves

tomatoes, sliced

Breakfast Crostata is a fancy name for breakfast pizza, and with caramelised onions, potato, prosciutto and camembert, this recipe deserves it's title

Thermomix recipe: Breakfast Crostata

100 Grams whole wheat

Grams fresh yeast (or 2 tsp dried instant yeast)

water

Grams Extra Virgin Olive Oil (EVOO)

400 Grams bakers flour

Teaspoons Pink Salt Flakes

brown onions, sliced thinly

Flakes

red skinned potatoes, sliced

Roma tomatoes, sliced

Grams provolone

Handful Kalamata olives, pitted

To make dough, place whole wheat into Thermomix bowl and mill **1 min/speed 10**. Remove from bowl and set aside.

Place yeast, water and EVOO into Thermomix bowl and warm **2 min/37°C/speed 2**.

Add milled wheat flour, bakers flour and salt to Thermomix bowl and mix **10 sec/speed 6**.

Turn out into a well oiled glass or ceramic bowl, knead into a tight ball, cover and allow to prove for at least an hour.

Meanwhile, preheat a pizza stone in the hottest oven you can manage. (Bread baking setting is optimum if available.) The longer you heat your oven the better.

To make filling, place sliced onion, EVOO and salt into clean Thermomix bowl and place sliced potatoes into Varoma dish and set into position.

Cook **50 min/Varoma/Reverse/speed 2**. Cool slightly.

Spread the caramelised onion onto both dough rounds, leaving approx 8cm border around the edges.

Top with cooked potato, sliced tomato, ham, cheeses and olives. Tuck the dough up to form a crust, pinching it together in folds so that it holds the filling.

Place one at a time onto the hot pizza stone and cook about 10-15 minutes, or until dough is well cooked and filling is golden. (This will depend on the heat in your oven.)

Serve immediately garnished with thyme sprigs.

Caramelised Onion Chutney

kg red onions

ml rapeseed/Canola oil

unsalted butter

bay leaves

300 g light brown muscavado sugar

ml red wine vinegar

200 ml Balsamic vinegar

salt

chilli flakes

Peel and thinly slice onions - make sure they are evenly cut.

Over a low heat, melt rapeseed/Canola oil and unsalted butter in your preserving pan/saucepan.

Add onions and bay leaves and stir.

Cover with lid and cook for 40 minutes until onions are soft but not brown.

Stir in 4 tablespoons of sugar and cook for 15 minutes on a low heat, stirring from time to time.

Remove the lid and take off the heat. Stir in the rest of the sugar along with the salt, chilli flakes and vinegars.

Return the pan to a low heat and let the chutney mixture simmer for at least 1½ to 2 hours, stirring every now and then to prevent it sticking to the bottom of the pan.

The chutney is ready when the liquid content has reduced so that a spatula drawn through it will leave a trail for 30 seconds before filling in again.

Ladle into sterilised jars and seal with screw top lids.

Wipe the sealed jars with a warm damp cloth. Label when cold.

Stovetop method

Add the onions and the bay leaves to your slow cooker and top with the butter and oil.

Replace the slow cooker lid and cook on the low setting for 3 hours so your onions are soft and cooked through.

Stir in the sugar, vinegars, salt and chilli flakes.

Replace the slow cooker lid but this time prop it open a little with a wooden spoon or spatula. Cook on High for 5 or 6 hours.

Check after 5 hours and if it’s not ready, replace the lid propped open by the wooden spoon and leave for another hour or so.

This caramelised French onion pasta recipe is a budget-friendly, flavour-packed pasta dish and you only need a handful of ingredients to make it.

Caramelised French onion pasta recipe

brown onions, thinly sliced

olive oil

garlic

pkt French onion soup mix

spreadable cream cheese

dried farfalle pasta

continental parsley, to serve (optional)

Step 1

Preheat oven to 200C/180C fan-forced. Place the onion and 2 1/2 tbsp oil in a large baking dish and toss to coat. Season.

Step 2

Cut off the top of the garlic bulb crossways, then place bulb in the centre of the baking dish. Drizzle with the remaining 2 tsp oil. Cover the dish with foil. Roast, stirring every 30 minutes, for 1 1/2 hours or until the onion is soft and golden. Remove the foil and roast, stirring halfway, for a further 10 minutes or until the onion is caramelised.

Step 3

Meanwhile, combine the French onion soup mix and cream cheese in a bowl. Cook the pasta in salted boiling water following packet directions or until al dente. Drain, reserving 125ml (1/2 cup) cooking water.

Step 4

Remove the garlic bulb from the pan and squeeze the garlic flesh from the skins into the baking dish. Add the cream cheese mixture and stir until combined. Add the pasta and reserved cooking water, and stir until the mixture is well combined. Stir in the parsley, if using. Divide among serving bowls and sprinkle with parmesan, to serve.
