Indulge in the cozy warmth of this vegan caramel apple parfait. Layers of caramelized apples, cinnamon cookies, and whipped cream, drizzled with a heavenly coconut butterscotch sauce, create a deliciously creamy and comforting treat.

Vegan Caramel Apple Parfait

coconut oil (120 ml) (softened)

sugar (120 grams)

brown sugar (60 grams)

tsp vanilla extract

all-purpose flour (180 grams)

cinnamon

tsp baking soda

tsp salt

vegan butter (60 grams)

apples (300 grams) (peeled and diced)

nutmeg

tsp allspice

oz sweetened condensed coconut milk (200 ml) (1/2 can)

13.5 oz coconut whipping cream (400 ml) (1 can)

coconut butterscotch sauce (120 ml)

Preparation

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Wet ingredients

Cream together coconut oil, granulated sugar, and brown sugar. Add vanilla extract and mix until combined.

Dry ingredients

In a separate bowl, whisk together flour, cinnamon, baking soda, and salt.

Mix dough

Add dry ingredients to wet ingredients and mix until dough forms.

Shape

Form dough into small balls and place them on the prepared baking sheet.

Baking

Bake for 10-12 minutes, until edges turn golden brown. Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

For the cinnamon cookies

Apples

In a medium saucepan, melt vegan butter over medium heat. Add diced apples, cinnamon, nutmeg, and allspice, and cook until apples are softened and lightly caramelized (5-7 minutes).

Caramelizing

Add 1/4 cup (60ml) condensed coconut milk, and remove from heat when apples are fully caramelized. Let it cool.

Whipping

In a bowl, whip coconut whipping cream until stiff peaks form.

Caramel

Whip 3/4 of the butterscotch sauce with 1/2 cup (120ml) of the whipped cream for a sweet caramel layer.

Assemble

To assemble the parfait, layer crushed cinnamon cookies at the bottom of four parfait glasses. Add apple mixture, caramel mixture, and whipped cream, repeating until glasses are full. Top with a drizzle of coconut butterscotch sauce and cookie crumbs.

Salted Caramel Apple Pie Oatmeal

apples ((Golden delicious, Honeycrisp,

maple syrup

tbsp coconut sugar

water

oats

applesauce

almond milk

Peel the apples, remove the core, and dice into thick cubes.

Heat the butter in a non-stick pan over medium heat. Once melted, add the diced apples and sauté for 5-7 minutes, or until the apples are tender and slightly golden brown. In the meantime, prepare the oatmeal.

Next, add the coconut sugar, maple syrup, and salt, and stir to coat the apples with the sugar. Cook for another 2 minutes, or until the coconut sugar has melted and the maple syrup has slightly reduced.

Deglaze the skillet with the 3 tbsp of water and stir in the vanilla extract. Cook for another 15-30 seconds, or until the syrup has thickened a little bit. If apples have absorbed all of the syrup, add an extra 2 tablespoons of water.

Remove from heat and cover to keep warm.

Caramelized Apples

In a medium saucepan, combine the rolled oats, apple sauce, almond milk, cinnamon, and salt.

Bring to a boil, then reduce the heat to low, and let simmer uncovered for 5-7 minutes. Stir regularly to make sure oats don&#39;t stick to the bottom of the pan.

Divide between 3 serving bowls and top with the warm caramelized apples! Feel free to add a pinch of extra cinnamon and toasted slivered almonds as well.

This oatmeal is best served immediately but will keep for up to 2 days in the refrigerator. It can be enjoyed as a cold breakfast, or reheated on the stove (you may have to add a little bit more almond milk).

This was yummy and hit the spot. My teenager enjoyed as well and we both especially loved the caramel apples. I had to add an extra cup of water to make sure my oats cooked through and once the water reduced they still had a good texture.

This was so good!! perfect for a rainy fall day here in the mountains. Had everything in hand too which was nice. :-)
