One Pot French Onion Pasta gives you the flavors of French Onion Soup in a filling, slightly creamy pasta recipe. Start with caramelized onions in a large pot then add the remaining ingredients, including the uncooked pasta. Everything cooks up in the one pot for easy clean up!

One Pot French Onion Pasta

butter

large yellow onions, halved and thinly sliced

cup sherry

cup white wine

4-5 sprigs fresh thyme, plus extra for garnish

Kosher salt and ground black pepper

lb uncooked rigatoni

cups beef broth or stock

teaspoon Worcestershire sauce

cup freshly parmesan, plus

cup heavy cream, or half and half

Caramelize Onions - 

Heat up a large dutch oven or pot over medium heat and melt the butter. Add the thinly sliced onions and cook over medium for about 5 minutes until starting to soften. Reduce the heat to medium-low and cook for about 30 minutes until caramelized. Stir the onions occasionally to keep them from sticking to the bottom.

Deglaze Pan -

 Pour in the sherry and white wine to the onions. Scrape any bits off the bottom and let cook for a couple minutes so the wine reduces slightly.

Add Pasta Ingredients - 

Add the sprigs of thyme (you can use twine to tie them together in a bundle), a pinch of salt, heavy pinch of pepper, the uncooked pasta, beef broth, and Worcestershire sauce. Stir to combine.

Boil - 

Bring the broth to a boil, give one big stir, and immediately lower the heat and cover the pot so it simmer. Allow to simmer for about 10 minutes, or until the liquid is absorbed and the pasta is al dente.

Finish Pasta - 

Turn off the heat and remove and discard the thyme sprigs. Stir in the heavy cream and parmesan cream until combined. Taste and adjust the salt and pepper, if needed.

Serve - 

Serve the pasta in bowls. I like to top with fresh parmesan and a light sprinkle of extra thyme leaves.

Vegan Caramelized Onion Pasta

olive oil

yellow onions, thinly sliced

Water,

5 cloves garlic, sliced

tsp Italian seasoning

tsp red pepper flakes, optional

julienned sun-dried tomatoes, jarred packed in oil

tbsp balsamic glaze

tbsp soy sauce

store bought or homemade vegan cream

parsley

Salt and pepper

Fill one large pot with water for the pasta and set aside. Heat a large skillet over medium heat, then add the oil to warm through. Once warm, add the onions along with a pinch of salt. Sauté the onions, stirring frequently for about 5 minutes or until you start noticing some brown streaks on the surface of the pan. Add 1-2 tablespoons of water and stir into the onions to deglaze the pan. Continue cooking the onions, adding a splash of water as needed to prevent the onions from sticking or burning until they become a deep golden brown color (this will take about 15 minutes).

Add in the garlic, Italian seasoning and red pepper flakes and sauté with the onions until the garlic is cooked through and the onions are jammy, about 3-4 minutes. Continue deglazing the pan as needed.

While the onions are cooking, begin boiling the water for the pasta. Salt the water generously and once boiling add in the pasta and cook according to package. Make sure to reserve 1 cup of the pasta water.

To the onions add the sun-dried tomatoes, balsamic glaze, soy sauce, cream and 1/2 cup of the pasta water. Stir well to combine then fold in the pasta and parsley. If needed add more pasta water until the pasta is at the level of creaminess you like.

Serve the pasta as is or pair with your favorite protein like roasted chickpeas or tofu.

French Onion Soup Pasta

tbsp butter (use vegan butter if needed)

1.1 lb (500 grams) yellow onion, thinly sliced (~2 large onions)

garlic, minced

tsp fresh thyme, chopped (or 1 tsp dried thyme)

tbsp all-purpose flour rice flour

dry white wine

tsp low-sodium soy sauce

vegetable broth

(340 grams) short-cut pasta

tsp Freshly cracked black pepper

Heat a large Dutch oven or a large cast-iron skillet over medium heat. Melt butter and add the olive oil. Add the sliced onions and season with ¼ teaspoon of salt.

Cook, stirring often, for 45-50 minutes, or until the onions start to caramelize and have a deep golden brown color. In the beginning, you won&#39;t have to stir as frequently.

If they start to burn at any point, add a splash of water to bring the temperature down. When the onions start to develop some color (after 30 minutes), turn the heat to high and start stirring every 30 seconds to 1 minute.

When the onions have caramelized, add the minced garlic and fresh thyme, and cook for 1 minute, stirring constantly, or until fragrant.

Add the flour and stir. Toast for 30 seconds, then deglaze the pan with the white wine and soy sauce. Stir well to get any brow bits off the bottom of the pot. Cook for 1-2 minutes, or until the alcohol evaporates.

Add 2 cups of the vegetable broth, and the uncooked pasta, and season with 1/4 tsp of salt, and black pepper.

Cook the pasta over medium-low heat, stirring frequently, or until it absorbs most of the liquid. When that happens, add another 2 cups of vegetable broth, and continue cooking until it absorbs most of the liquid. Then, add the final 2 cups and cook until you have a luscious sauce and the pasta is cooked through This will take you roughly 25 minutes, for the pasta to absorb all of the liquid, release starch, and cook through.

The best way to tell if the pasta is ready is to taste it. It should be al dente, meaning the pasta should have a slight bite to it and be chewy, but still soft. In the end, turn off the heat and stir the cheese until it melts. Taste and adjust the seasoning if needed, adding more salt and black pepper as needed. Serve!

Preheat the oven to 400F.

To a large baking dish (at least 9x9), add the sliced onions, balsamic glaze, olive oil, sun dried tomatoes, and Italian seasoning. Mix well. Place the prepped garlic in the center of the dish. Drizzle the exposed garlic cloves with olive oil. Cover the dish tightly with foil.

Bake for 60 to 70 minutes or until the onions have caramelized. I like to stir the onions 2 to 3 times throughout the baking time.

About 10 minutes before the onions have finished baking, start on boiling the pasta as per the package instructions. Reserve about 1/2 cup of the pasta water.

Remove the onion mixture from the oven. Using a kitchen towel to protect your hands, squeeze the garlic from the peel, directly onto the onion mixture. Add the Boursin cheese and stir to combine. Add in the hot pasta and a touch of the starchy pasta water, if needed.

Toss well and feel free to garnish with basil, parmigiano, and chili oil, if desired. Enjoy!

This was easy to make and delicious! The sundried tomatoes are a perfect touch.

This one is so easy and soooo good! No need to head to the grocery store, because you likely already have all the ingredients at home. This is the perfect comfort meal, and even impressed my picky-eater cheese-hating husband (it was still to die-for without the boursin). I used a whole jar of sundried tomatoes and would do that next time too! This bad boy is going in my regular rotation for sure. Making this right now and the house smells wonderful. Very, very versatile recipe. If you like more garlic, add more. More sundried tomatoes? Yup, add more. Some oil from the jar of tomatoes?
