Slow cooker caramelized French onion soup is an easy, restaurant-level dish that will disappear as fast as you serve it.  Use your crockpot to first caramelize the onions, then add soup ingredients right in for a finished dish that is a home run - every time!

Slow Cooker Caramelized French Onion Soup

lbs onions (I use yellow)

tbsp olive oil (can substitute with butter)

beef broth (can substitute with onion or vegetable broth)

cooking sherry

garlic

Worcestershire sauce

¼ tsp Thyme (dried)

bread

Gruyere cheese (sliced

quarter and then slice onions and break apart nested pieces

place onions pieces and olive oil into slow cooker and stir to coat

cover and cook on low for 12-14 hours (It is great to do this overnight)

IMPORTANT NOTE: If you prefer, you can caramelize the onions on a cooktop in a more traditional format.  However you do it, Do not skip this step!  This soup will not turn out without caramelizing the onions first!

How to use your slow cooker to caramelize onions

add all ingredients but bread and cheese into slow cooker

cover and cook on low for 4-6 hours

when ready to serve, place soup into individual bowls

place a piece of toasted French bread onto of soup and cover with cheese

place bowl under broiler for 5 minutes until cheese is melted and bubbling

How to make onion soup

Slowly caramelising the onions gives this rich vegan French onion soup loads of depth of flavour, with just a hint of sweetness.

Vegan French Onion Soup

olive oil

onions

tsp sugar

garlic ((large, fat ones) peeled and thinly sliced)

ml white wine ((alcohol-free if necessary))

vegetable broth

tbsp cornflour (aka cornstarch) (+ 2 tbsp water)

black pepper and sea salt (to taste)

In a large heavy-bottomed pan, gently fry the onions for 5 mins or so over a medium heat until they begin to go soft.

Stir in the sugar, put the lid on the pan, turn down the heat a little, and let the onions caramelise for about 35 minutes.

Add the garlic, stir, replace the lid, and continue to cook for another 10 minutes.

Stir in the wine and the hot stock.

Make a thin paste by mixing the tapioca flour with 2 tbsp water, and add to the soup, stirring all the time to ensure no lumps form.

Keep stirring until the soup has thickened slightly, then grind in some pepper, and add a dash of salt. Taste and season more if desired.

Replace the lid, and allow to simmer for another 25 minutes.

Serve immediately. This French onion soup can be kept in the fridge for around 3 days, or in the freezer for up to 3 months.

A delicious onion soup with protein-packed lentils and gruyere toasties. The recipe takes a while to cook, but does not require a lot of active cooking time.

Vegetarian French Onion Soup with Lentils

tbsp butter

garlic (pressed

tsp sea salt

tbsp all purpose flour

dry white wine (I used Pinot Grigio)

tbsp balsamic vinegar

thyme

green lentils (dried (not cooked), rinsed, and sorted)

French baguette (for serving)

gruyere (freshly shredded)

Slice the bottoms off the onions and remove their skins, then cut in half from top to bottom. Slice each onion half into thin, half-moon slices.

Heat the butter and olive oil in a large pot over medium heat. Add the onions and cook for 5 minutes. Stir, and reduce heat to medium-low. Let the onions cook, stirring occasionally, until they shrink down and get brown in color, about 40-45 minutes. If you want to cook them for a longer time for a stronger caramelized taste, you can.

Add the salt, flour, and garlic to the onions once they are caramelized to your liking. Stir and cook for a few more minutes.

Pour the white wine into the pot and use your spoon to scrape off any of the bits of caramelized onion stuck to the bottom. Add the vegetable broth, balsamic, thyme, and dried lentils to the pot. Increase heat and bring to a boil. Cover, then reduce heat to low and let the soup simmer for 20-25 minutes, or until the lentils are tender.

While the soup is cooking, slice the baguette and shred the cheese. If desired, you can toast the baguette slices by placing them on a baking sheet under the broiler for a couple of minutes.

Ladle the soup into oven-safe bowls, top with 1-2 slices of bread, and sprinkle the shredded Gruyere evenly over the bowls. Transfer the bowls to the oven, by placing them directly on the center rack or on a baking sheet, and turn on the broiler to high. Cook for 1-2 minutes or until the cheese is melted. Carefully remove from oven and enjoy!

Onion Soup with Fontina

unsalted butter

garlic,

In a large pot or Dutch oven, melt butter with olive oil over medium heat.

Add sliced onions and cook, stirring often, for 30–40 minutes until caramelized and golden brown.

Stir in minced garlic and cook for 1 minute.

Deglaze the pot with white wine (if using), scraping up browned bits. Simmer for 2–3 minutes.

Add broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 15–20 minutes. Remove bay leaf.

While the soup simmers, toast the bread slices until golden and crisp.

Preheat broiler. Ladle soup into oven-safe bowls, top each with toasted bread and a generous amount of grated Fontina.

Place bowls under broiler for 2–4 minutes until cheese is melted and bubbly.

Serve hot, garnished with fresh thyme if desired.
