From time to time I receive e-mails asking some common questions for an&nbsp;Authentic Carne Asada recipe, the first one being how to marinate the meat. I always give out the same answer: every cook or grill master has their own unique way of seasoning their meat. I hope you enjoy this delicious recipe.

CARNE ASADA RECIPE

Place the flank steak in a large baking dish and, if using the sliced onion, spread the slices over the meat.

In a medium-sized bowl mix together the orange juice, lime juice, light beer, Kikkoman soy sauce, vegetable oil, and freshly ground black pepper.

Pour the marinade over the meat; cover with a plastic film and refrigerate for at least one hour.

Light up your charcoal grill, or preheat your gas grill. (You can also use a cast iron grill pan, the ones you use over the stove top). And brush your grill with a little vegetable oil as this will prevent the meat from sticking.

Remove meat from marinade and pat dry. Place meat on the grill and cook for 8 to 10 minutes per side. (Cooking time will depend on the meat thickness and your personal preferences, either medium or well done). Remove meat from grill and place it on your cutting board. Slice it and serve it with corn tortillas and other garnishes mentioned above.

If you would like to have the same effect as that of the Mexican-American restaurant, place the cooked meat on a preheated cast iron pan, add a few drops of  Soy Sauce and serve immediately. Enjoy!

Carne Guisada or Latin Beef Stew is made with chunks of beef simmered in beer with scallions, garlic, tomatoes, cumin and cilantro.

Carne Guisada (Latin Beef Stew)

olive oil

scallions (chopped)

garlic (minced)

tomatoes (diced)

cilantro (minced)

beef

water

tsp cumin

tsp adobo (or salt)

tsp achiote (or sazon)

bay leaf

salt

oz baby red potatoes (halved or quartered)

In a large dutch oven or heavy pot, heat oil over medium heat.

Add scallions and garlic and sauté about 2 - 3 minutes; add tomatoes, cilantro and a pinch of salt. Cook another 2 minutes, stirring.

Add beef to the pot along with beer, water, cumin, adobo, achiote, bay leaf and salt if needed.

Cover and simmer on low heat 1 1/2 hours.

Test to make sure beef is tender, if not cook another 15 minutes.

Add potatoes and cook until soft, about 20 minutes depending on the size.

Stove top:

In a large pressure cooker, heat oil over medium heat. Add scallions and garlic and sauté; about 2 - 3 minutes.

Add tomatoes, cilantro and a pinch of salt. Cook another 2 minutes stirring.

Cover pressure cooker; when the lid is locked, cook high pressure 45 minutes. Quick release.

Add the potatoes, cover and cook on high pressure about 8 minutes, or until tender. Quick release and serve.

This Carne Guisada is a delicious Latin Beef Stew made with chunks of beef slowly cooked in the most delicious gravy. Serve it with rice, refried beans and warmed up tortillas for the ultimate dinner.

all-purpose flour (or more for thicker gravy)

beef broth (low sodium)

cilantro

Sear the beef.

Sear the beef. Add 2 tablespoons of the olive oil to a large skillet and heat over medium-high heat. Add the stew meat and cook until browned on all sides, about 5 to 7 minutes. Transfer the beef to a plate and set aside. You might have to do this in batches, you don&#39;t want to overcrowd the meat in the pan. If doing in batches, only add 1 tablespoon of oil at a time.

Cook the veggies.

Cook the veggies. Drizzle the remaining olive oil to the skillet. Add the onion, bell pepper and cook for about 3 minutes until the onion becomes translucent. Add the garlic and cook for another minute until aromatic. Stir in the tomatoes and cook for another minute.

Add the spices.

Add the spices. Season with salt, pepper, cumin and chili powder. Stir well. Add the tomato paste and crumble up the beef bouillon, stir, scraping up the browned bits from the bottom of the pan.

Start the gravy.

Start the gravy. Sprinkle the flour over the veggies and stir well while cooking for another 1 to 2 minutes to remove the raw flour taste. Add a cup of the beef broth and stir everything together. The mixture should start to thicken from the flour.

Add the beef and cook.

Add the beef and cook. Add the beef back to the skillet then another 2 cups of beef broth, stir until combined. Cover and cook for 1 and a half hours or more until the meat falls apart, over low heat, stirring occasionally. Add more beef broth if gravy is too thick.

Garnish and serve.

Garnish and serve. Taste for seasoning and adjust with salt and pepper as needed. Garnish with cilantro and serve alongside with rice and tortillas.

This Mexican beef stew is oozing with lots of flavors from herbs and spices. Every bite of this tender and juicy beef is an explosion of savory flavors and delectable goodness. The thick and rich sauce dripping over the warm rice is gorgeously enticing. With spiciness not too overpowering.

serrano pepper, (slightly toasted, peeled, seeded, and chopped)

cilantro leaves, (chopped)

Add beef to a large bowl then season with salt, pepper, and sazon seasoning (optional). Lightly flour with about 3 tablespoons flour.

Heat a large skillet or pot on medium-high heat and pour the vegetable oil. Add the beef and brown on both sides. As soon as beef browns up add garlic and onions, sauté for about 2-3 minutes.

Stir in diced tomatoes, cumin, oregano, and chili powder. Cook for about 2-3 minutes.

Pour in water and/or beef stock and mix well making sure every inch of the pot has been closed.

Bring to a boil, cover pan, and reduce heat to low. Cook for 1 ½ hour, or until meat is tender. Throw in diced serrano pepper and continue to cook for about 5 minutes.

Add in cilantro to taste, and adjust seasonings if necessary.

Serve with rice and or tortillas.

Pat dry the cubed beef to remove excess moisture.

Place a large cast iron pan or Dutch oven on medium-high heat. When hot, add the canola oil and cubed beef without crowding the pan (see note).

Sauté the beef for 5 minutes, turning every few minutes until brown on all sides. Repeat with remaining beef if batches are necessary.

Reduce heat to medium and add the onion, garlic and green pepper to the beef. Sauté for 3-4 minutes.

Add the tomatoes, cumin, optional oregano, optional jalapeño, salt, pepper and broth. Bring to a boil.

Reduce heat to low and cover the pan. (You can also transfer to a crock pot at this point if you prefer - see note.)

Simmer for 60-90 minutes or until the beef is tender. Add extra broth halfway if needed to prevent sticking.

If the sauce looks runny, sprinkle in the optional flour and boil for several minutes to thicken up a gravy, stirring regularly to dissolve any lumps.

Serve with rice, potatoes or tortillas.
