Carnitas Burrito Bowl (Chipotle Copycat)

romaine lettuce (shredded)

cilantro lime rice

slow-cooker carnitas

black beans

pico de gallo

guacamole

shredded cheese (optional)

lime crema (optional)

bell pepper (thinly sliced)

onion (thinly sliced)

olive oil

salt and pepper (to taste)

fajita seasoning (to taste)

Heat the olive oil in a pan over medium-high heat. Stir fry the bell pepper and onion until cooked through, then set aside.

Warm up your leftover slow-cooker carnitas in the microwave then set aside.

In a large salad bowl, layer the lettuce with cilantro lime rice, black beans, carnitas, and fajita veggies.

Then dollop on the pico de gallo, guacamole, and sprinkle with cheese.

Add warm carnitas, warm quinoa, and arugula to a large serving bowl. Top with your favorite toppings as preferred.

Pork Carnitas make a great protein that can be used for several different meal options like these burrito bowls, tacos, sandwiches and more!

Seasoned Pork Carnitas | Gluten-Free, Dairy-Free

salt

tsp sumac ((optional))

pork butt

filtered water

tsp GF liquid smoke

sweet onion, (quartered)

shallots

garlic

tbsp kosher salt

tbsp organic raw cane sugar

paprika

turmeric

onion powder

garlic powder

cornstarch

Mix together the spices to make your seasoned salt blend and store in an airtight container.

Preheat the oven to 350 degrees F.

Rinse the pork butt, which usually comes in several pieces. Remove most of the fat and cut into 2-inch pieces. In a bowl, mix the pork pieces with the seasoned salt (1 tablespoon seasoned salt per pound of pork) and make sure they are all well coated.

Place a roasting grate or baking rack inside a roasting or baking dish. Fill with the water and liquid smoke. Carefully, place the seasoned pork pieces onto the grate. Place the onion quarters and garlic cloves over the meat.

Cover with foil and bake in the oven for 1 1/2 hours.

Remove the foil and bake for 1 hour. Let cool enough to handle then shred the pork.
