These easy enchiladas are quickly made with leftover carnitas! Just assemble, bake and serve for a quick and easy weeknight meal!

Carnitas Enchiladas

red enchilada sauce ((2 cans))

black beans

cheese

pico de gallo

Preheat oven to 375˚F.

Mix together the carnitas, black beans, and half of the cheese and mix together in a large bowl. Set aside.

Heat the enchilada sauce over low in a large skillet. Once it starts to simmer around the edges, place 2-3 tortillas in the sauce and turn to coat. Let them cook in the sauce for about 30 sec or until they become soft and pliable.

Use tongs to take the tortillas out one at a time. Stuff them with the carnitas mixture, roll tightly, and place in a 2 quart casserole dish. Repeat with remaining tortillas until all of the tortillas are stuffed, rolled, and in the casserole dish.

Pour the remaining sauce over the enchiladas and top with the remaining cheese.Cover with foil and bake for 20 minutes.

Once done, remove the foil and garnish with fresh pico de gallo, sour cream, or whatever toppings you love!

Pulled pork enchiladas is a hearty Mexican enchilada casserole. Make this recipe for a dinner of perfectly tender carnitas enchiladas!

Carnitas Pulled Pork Enchiladas

oz pinto beans (drained)

rice ((See Note 2))

oz can chopped green chiles

Cotija cheese (part skim milk cheese, crumbled)

cheddar cheese (shredded)

flour tortillas ((or corn or wheat tortillas))

oz red enchilada sauce ((See Note 3))

Monterey Jack cheese (shredded)

cilantro leaves (chopped)

queso fresco (crumbled)

cotija cheese (crumbled)

Preheat oven to 400˚F

Grease the inner bottom and sides of a 13 x 9-inch baking dish with non-stick cooking spray or oil. Spread 1/2 cup enchilada sauce evenly across the bottom and set aside.

In a large mixing bowl, combine pulled pork, beans, cooked rice, green chiles, cheeses and onion.

Evenly distribute the filling between 12-14 tortillas, placing it in the center of each. Roll them up (watch my video for helpful tips and instructions) and place them side by side over the enchilada sauce in the dish.

Top rolled enchiladas with remaining enchilada sauce and distribute 2 cups of cheese evenly over the top.

Cover pan with aluminum foil sprayed with non-stick cooking spray to avoid the cheese from sticking. Bake in preheated oven for 20 minutes. Remove foil and place enchilada casserole back in the oven for 10 minutes, or until cheeses are melted and enchiladas are heated through. Remove from oven and allow enchiladas to cool in pan for 10 minutes.

These delicious enchiladas are filled with juicy pork carnitas and smothered in melted cheese. Topped off with homemade red enchilada sauce, this is a dinner that the whole family will go crazy over.

Pork Enchiladas

8-12 flour tortillas

Prepare pork carnitas ahead of time. A link is provided in the recipe card.

Preheat your oven to 350 degrees Fahrenheit and lightly grease a baking dish. Pour about 1/4 cup of enchilada sauce into the prepared pan and spread it evenly to coat the bottom of the pan.

In a large bowl, combine the pork carnitas and diced green chilies, and mix well.

To assemble the enchiladas, spoon a generous amount of the pork mixture in the middle of the tortilla. Sprinkle about 2 tablespoons of shredded Monterey Jack cheese on top of the pork. Roll it up tightly, placing it seam-side down in the prepared baking dish. Repeat with the remaining tortillas.

Pour the red enchilada sauce over the rolled tortillas, ensuring they are evenly coated.

Sprinkle the Colby Jack cheese over the top of the enchiladas.

Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes until the enchiladas are warmed through and the cheese has melted.

Remove the foil and continue baking for an additional 5 minutes or until the cheese turns golden and bubbly.

Enjoy the enchiladas warm with cilantro or desired toppings!
