Milk,

Eggs

tsp Vanilla extract

All purpose Flour, more or less (Check tips)

Sugar

Salt

tsp Baking powder

Cinnamon powder (optional)

Oil,

Confectioners Sugar, as needed

Heat Oil

Heat oil in a pan or skillet on medium heat so that it becomes nice and hot.

Make batter

In a bowl, whisk together milk, eggs, and vanilla together. To this add dry ingredients – flour, sugar, salt, and baking powder. Whisk together until it is smooth and creamy.

Adjusting batter

If you feel the batter is too thick, add more milk, if it is too thin then add extra flour. Basically, the batter should be slightly thicker than your regular pancake batter but of pourable consistency. (Check tips)

Prepare Funnel Cake Batter

Pour batter

To pour batter into the oil you can use a funnel cake dispenser or Ziploc bags or refillable round nozzle squeeze bottle with 1/4 inch nozzle.

Zigzag Patterns

Pour some of the batter into any one of the above pouring devices and drizzle in a swirling and overlapping motion (or zig-zag pattern) in hot oil to get a funnel cake. Make sure some of the swirls are connected. This need not have to be a perfect circle

Cook

Let this cook for about 2 minutes on each side or until golden brown and crispy.

Transfer it to a paper towel to absorb any excess oil.

Sprinkle Sugar

Sprinkle with confectioners sugar as needed.

How to pour batter and fry

This elephant ear pastry is flaky, fried, golden perfection. Dipped in heaps of cinnamon and sugar, it tastes just like the fair!

Elephant Ear Pastry Recipe

milk (397 grams, warm (110°F))

sugar (149 grams, divided)

instant yeast (14 grams)

unsalted butter (84 grams, melted (¾ stick))

cinnamon (6 grams, divided)

salt

all-purpose flour (660 grams, divided)

Vegetable oil

Add the milk, ¼ cup of the sugar, and the yeast to a large bowl. Stir to combine. Let sit for 5 minutes, or until it starts to bubble.

Stir

Stir in the butter, 1 teaspoon of the cinnamon, and the salt to combine.

Turn

Add 5 cups of the flour and stir until you can no longer. Turn the dough out onto a lightly floured surface.

Knead

Knead the dough for 5 minutes, adding a light dust of flour when it becomes too sticky to handle, but don’t overdo it. You want the dough to be tacky but not sticky.

Scrape

Scrape out any flour bits from the bowl,  spray with nonstick spray, and place the dough in the bowl. Cover and let sit for 1 hour, until doubled in size.

Heat

Heat 2 inches of oil in a deep-frying pan over medium heat until it reaches 265°F.

Divide

In the meantime, divide the dough into 15 equal balls and roll each out into a roughly 7-inch round.

Fry one disk at a time for 3-4 minutes, flipping the disk every 30-45 seconds to ensure even cooking.

Cool

Let them cool on a plate with a paper towel to drain off any excess oil.

Stir the remaining sugar and cinnamon together in a shallow bowl or a plate then dip each disk in the dough and lightly tap off the excess. Serve and enjoy!

These turned out great!  I cut the recipe back to 5 servings and split the dough into sixths. They fried up great!  
We are heading to the county fair tonight and I wanted an authentic treat to bring for my son who is a allergic to peanuts and tree nuts. These will be great for him to have while his sisters have something at the fair. Thank you!
