No Bake Keto Cheesecake for One

cream cheese (room temperature)

sour cream

heavy whipping cream

Monkfruit Sweetener

vanilla extract

Beat all ingredients together with an electric mixer. Continue mixing until smooth.

Serve immediately or chill for 30-60 minutes.

You are so thoughtful for posting this recipe. It's such a simple treat that could be scaled up easily. I'm also glad it's low oxalate because myself and my child have a big load of oxalates.

The creamy texture is so satisfying, and the powdered monk fruit gives it just the right amount of sweetness. It's so quick to make and so delicious. I'll be making this  dessert again for sure.

Carnivore Custard Recipe

eggs

heavy cream

Preheat

Whisk

Whisk all ingredients together in a large bowl until completely smooth.

Divide

Divide evenly between 4, 2 or 3-inch ramekins and place them in an 8x8-inch baking dish.

Boil

Bring 2-3 cups of water to a boil in a small saucepan. Create a water bath by pouring boiling water into the baking dish. Continue until the water level is an inch high.

Bake

Bake for 30 minutes, check, and continue for 10 more minutes if needed. The top should be golden brown and firm. The under part will be wiggly still.

Remove from the oven. Let cool and set for 10 minutes, before serving warm or refrigerating until chilled. It will firm up as it sits.

easy and great! I made this for the first time. I'm not strict carnivore, but have been keto for 4 years. I did add 15 drops of liquid stevia to sweeten it. My husband added choc zero caramel syrup on his once I pulled it out of the oven. (said it tasted like flan). It was a nice and creamy treat on a perfect Sunday afternoon.

soft-boiled eggs (peeled)

half and half

butter (softened)

sweetener (see note)

salt

Add all ingredients to the bowl of a blender and blend until smooth. Taste and adjust sweetener, as needed.

Chill

Best if chilled in the fridge for 2 hours before serving.

This is really good. 
I took C. Clay's advice and made soft scrambled eggs, I used powder monk fruit with erythritol for sweetener. I made the recipee at the 3x's ratios. It makes 6 ramekins and my kids absolutely loved this for breakfast. Its really thick and delicious. Thanks for sharing this recipee.

I've learned that using gently cooked scrambled eggs tastes better, less sulfur smell/taste. It's so good and rich. Great recipe! Thanks.

I can’t decide how I feel about this recipe. It tastes great and has great texture, A+…but has one major flaw; it can’t be helped, it’s the nature of a hard boiled egg to be this way. Nevertheless I’m making it again because it calms the turbulent waters without knocking me out of the boat.
