An easy-to-make Carrot Cake Loaf that is moist and sturdy with a thick layer of cream cheese frosting.

Carrot Cake Loaf

(250 grams) all-purpose flour

tea baking powder

tea baking soda

tea kosher salt (Diamond Crystal)

tea cinnamon

tea cardamom

tea ginger

(200 grams) granulated sugar

(65 grams) brown sugar

eggs

(160 milliliters) avocado or canola oil

(60 grams) plain Greek yogurt

(60 grams) buttermilk

carrots (175 grams) (shredded)

(57 grams) unsalted butter (softened)

(113 grams) cream cheese (softened)

sugar

tea vanilla extract

tbsp milk (as needed)

Preheat the oven to 325°F. Grease and line a 9X4.5-inch loaf pan and set aside.

In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and spices. Set aside.

In a separate mixing bowl, add the eggs, granulated sugar, and brown sugar. Whisk until smooth and the mixture slightly lightens in color, about 2 minutes.

Add the oil and whisk to combine. Add the yogurt and buttermilk. Whisk to combine.

Working in two additions, tip about half of the dry ingredients into the batter and stir together with a rubber spatula. Add the second half and mix until smooth.

Add the carrots and fold until combined. Scrape the batter into the prepared pan. Bake for 60 to 65 minutes, or until a wooden skewer poked into the center comes out clean.

Cool the cake on a wire rack before topping with the cream cheese frosting.

To Make the Carrot Cake Loaf

Using an electric mixer (hand or stand), beat the butter until smooth. Add the cream cheese and mix until combined.

Add the icing sugar and vanilla extract. Mix on low to combine then increase the speed to medium and mix until smooth. No need to over do it here, then frosting should be thick and smooth. Add milk as needed.

When done, scoop mounds of frosting on top of the cooled cake and swirl with an offset spatula or the back of a spoon. The frosting will be thick.

To Make the Cream Cheese Frosting

This carrot cake loaf is so easy to make with few ingredients.  You’ll love this carrot cake that is soft and moist!

Carrot Cake Loaf Recipe

190 g (1 cup and 5 tablespoons) all-purpose flour

cinnamon

nutmeg*

salt, (optional)

baking powder

eggs, (room temperature)

155 g(3/4 cup) granulated sugar

olive oil

vanilla extract*

carrots

60 g (1/2 cup) walnuts, (roughly cut into small pieces)

Preheat the oven to 350°F(177°C).  Grease 8 1/2 * 4 1/2 inch (21,5*10,5cm) loaf pan and line the bottom and sides with parchment paper, about 2 inches(5 cm) of overhang on each side.  If you like, you can grease and flour the dish instead of parchment paper.

Place the flour, cinnamon, nutmeg, baking powder (and salt if using) into a medium bowl and mix.  Set aside.

Roughly chop the walnuts into small pieces with a sharp knife, set aside.

Peel and grate the carrots, set aside.

Put the sugar and eggs in a large bowl and mix with a whisk until just combined for almost 45 seconds.

Mix in the olive oil and vanilla extract, stir with a whisk until just combined.

Add the flour mixture in 2 batches and stir until just combined.  You can use a whisk in the first batch but it will be easier to use a spoon/spatula in the end to mix easily.

Add the carrots and stir with a spoon/spatula.  Mix in the walnuts.

Pour the batter into the loaf pan with the help of a spoon. 

Bake for 50-55 minutes or until a toothpick comes out clean that is inserted in the center and the top is golden brown. After you remove the pan from the oven, leave in the pan until it cools completely, at least for 1 hour. 

Made this today and it came out great.  I followed the recipe with everything except I used canola oil instead of olive oil.  You are right about not over baking.  I checked it at 50 minutes, not quite done and 55 minutes was probably two minutes too much but it still tasted great.  I’m keeping this recipe!  So easy.  I would have uploaded a picture but don’t see a prompt to do so.

I was a bit skeptical at first because it was such a simple recipe but man oh man was I wrong! So yummy! So easy!

Just had some fuzzy carrots in the fridge and had to use them in this wonderful delicious, scrumptious cake.  Light, airy, flavourful, yummy!

Easy to make

This Carrot Cake Loaf is moist, made in one bowl, and packed with carrots, warm spices, and nuts. Topped with lighter cream cheese frosting!

applesauce (unsweetened)

maple syrup (or honey)

baking soda

nutmeg

ginger (dried)

salt

carrots (shredded)

whole wheat (or spelt flour)

all-purpose flour

walnuts (chopped (more for garnish))

Cooking spray (I use Misto)

full fat cream cheese (softened to room temperature)

plain Greek yogurt (I used 2%)

vanilla extract

Preheat oven to 350 F, line 9×5 loaf pan with parchment paper and spray with cooking spray. Set aside.

In a large bowl, add eggs, applesauce, oil, maple syrup, baking powder, baking soda, cinnamon, nutmeg, ginger and salt. Whisk well until no white lumps are left.

Add carrots and stir to combine. Add all-purpose flour and whole wheat flour, gently mix with spatula until just incorporated. Don&#39;t overmix. Fold in walnuts.

Transfer to previously prepared loaf pan and level with spatula. Bake for 50-60 minutes or until toothpick inserted in the center comes out clean.

Remove from the oven and let cool for 5 minutes, then transfer to a wire rack to cool off for another 2 hours or completely. 

While loaf is baking or cooling, make the cream cheese frosting. In a large bowl, add cream cheese, Greek yogurt, maple syrup and vanilla extract. Using an electric mixer on high speed, whip until smooth, pausing and scraping down the sides. 

Transfer on top of a cake loaf, spread with spatula and garnish with walnuts. Using serrated knife, cut into 10 slices and enjoy.
