This carrot bread recipe is out of this world! It&#039;s so simple to make, plus it&#039;s delicious. Loaded with carrots, cinnamon and nutmeg, then topped with a cream cheese glaze, this carrot cake loaf will put a smile on everyone&#039;s face!

Carrot Bread Recipe

milk (114 grams)

vegetable oil (50 grams)

plain Greek yogurt (57 grams)

eggs (150 grams)

pure vanilla extract (4 grams)

brown sugar (213 grams)

all-purpose flour (240 grams)

baking soda (12 grams)

cinnamon (5 grams)

nutmeg

carrots

cream cheese (85 grams, room temperature)

unsalted butter (14 grams, room temperature)

sugar (57 grams)

½ teaspoon pure vanilla extract (2 grams)

Preheat

Preheat oven to 350°F. Spray a 9x5-inch loaf pan with nonstick spray and line the bottom of the pan with parchment paper. Set aside.

Whisk

In a large bowl, whisk the milk, oil, yogurt, eggs, and vanilla together. Once smooth, add the brown sugar and stir to combine.

In a medium bowl, whisk the flour, baking soda, cinnamon, and nutmeg together.

Sprinkle

Place the shredded carrots in a small bowl. Sprinkle 2 tablespoons of the dry mix over the carrots - this ensures the carrots distribute evenly throughout the loaf.

Fold

Add the dry ingredients to the wet ingredients and mix just until combined. Gently fold in the shredded carrots.

Pour

Bake

Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool

Allow the loaf to cool in the pan for 10 minutes, then carefully transfer it to a wire rack and let cool completely.

For the Carrot Bread

Once the carrot bread is cool, mix the softened cream cheese and butter together in a microwave safe bowl. Add the powdered sugar and vanilla.

Heat

Microwave the glaze for 30 seconds. Stir well.

Serve

Pour it over the cooled carrot loaf and enjoy.

For the Cream Cheese Glaze

This carrot cake loaf is so easy to make with few ingredients.  You’ll love this carrot cake that is soft and moist!

Carrot Cake Loaf Recipe

190 g (1 cup and 5 tablespoons) all-purpose flour

cinnamon

nutmeg*

salt, (optional)

baking powder

eggs, (room temperature)

155 g(3/4 cup) granulated sugar

olive oil

vanilla extract*

60 g (1/2 cup) walnuts, (roughly cut into small pieces)

Preheat the oven to 350°F(177°C).  Grease 8 1/2 * 4 1/2 inch (21,5*10,5cm) loaf pan and line the bottom and sides with parchment paper, about 2 inches(5 cm) of overhang on each side.  If you like, you can grease and flour the dish instead of parchment paper.

Place the flour, cinnamon, nutmeg, baking powder (and salt if using) into a medium bowl and mix.  Set aside.

Roughly chop the walnuts into small pieces with a sharp knife, set aside.

Peel and grate the carrots, set aside.

Put the sugar and eggs in a large bowl and mix with a whisk until just combined for almost 45 seconds.

Mix in the olive oil and vanilla extract, stir with a whisk until just combined.

Add the flour mixture in 2 batches and stir until just combined.  You can use a whisk in the first batch but it will be easier to use a spoon/spatula in the end to mix easily.

Add the carrots and stir with a spoon/spatula.  Mix in the walnuts.

Pour the batter into the loaf pan with the help of a spoon. 

Bake for 50-55 minutes or until a toothpick comes out clean that is inserted in the center and the top is golden brown. After you remove the pan from the oven, leave in the pan until it cools completely, at least for 1 hour. 

Made this today and it came out great.  I followed the recipe with everything except I used canola oil instead of olive oil.  You are right about not over baking.  I checked it at 50 minutes, not quite done and 55 minutes was probably two minutes too much but it still tasted great.  I’m keeping this recipe!  So easy.  I would have uploaded a picture but don’t see a prompt to do so.

Just had some fuzzy carrots in the fridge and had to use them in this wonderful delicious, scrumptious cake.  Light, airy, flavourful, yummy!

This easy and healthy carrot bread is quick, simple to make and full of real wholesome ingredients, like fresh carrots, whole wheat flour and yogurt! It makes a great lunchbox snack or dessert.

🥕Healthy Carrot Bread Recipe

whole wheat flour

all-purpose flour

½ tsp cinnamon

tsp baking powder

tsp baking soda

canola oil

brown sugar

tsp vanilla extract

carrots (about 3 medium carrots)

pineapple

Preheat oven to 350 degrees F (176 degrees C).Spray a 9X5 loaf pan with non-stick cooking spray. 

Combine dry ingredients (flours, spices, baking soda, and baking powder) in a medium bowl. Set aside.

In another large bowl, beat egg till fluffy.

Then beat in other wet ingredients (oil,  yogurt, sugar, and vanilla.) Stir in grated carrots.

Add dry mixture to wet mixture and stir until combined.

If you are adding pineapple, add it here.

Pour batter into prepared loaf pan.

Bake at 350F for approximately 50 minutes or until a toothpick or cake tester inserted comes out clean.

Let cool in pan 5 minutes, then remove from pan and cool completely on a wire rack.

Serving: serve plain or with a little butter or margarine.

This turned out great! I replaced the applesauce with silken tofu because I had some in hand. I used einkorn flour and added dried cranberries and walnuts. So wholesome and yummy!!
