Delicious and easy cashew cream sauce with a kick of heat from jalapeño! This wonderful vegan cashew cream sauce is packed with flavor and healthy fats, and is perfect for pasta, grain bowls, tacos and even dipping.

Jalapeño Cashew Cream Sauce

Soak the cashews in 2 cups of warm water for at least 2 hours; otherwise I've found that you can easily speed up the process by adding the raw cashews to a pot with water and placing over high heat. Bring water to a boil, then immediately turn off the heat; let the cashews sit for about 30 minutes in the hot water, then drain.

Once the cashews have finished soaking you'll be ready to make the sauce: add drained cashews, fresh water, jalapeno, garlic, fresh lemon juice, salt, onion powder and black pepper to a blender. Blend on high until sauce comes together. If you want a bit of a thinner sauce, add 1-2 tablespoons more water. Makes roughly 1 cup sauce. Serves 4.

Soak the cashews in a large bowl covering them with water for 2-3 hours prior to cooking time. Once they are done soaking, rinse them thoroughly and drain the water they are soaking in. Set aside.&nbsp;

While the cashews are soaking, preheat your oven to 400 degrees. Cut the top off the garlic head - exposing each clove inside and ripping off as much white "garlic skin" as possible. Place on aluminum foil. Drizzle with olive oil and salt and pepper. Wrap the garlic in the aluminum foil and roast for 40-45 minutes.&nbsp;

Optional: Add fresh spinach to the pasta when warm - it will wilt quickly!&nbsp;

Exceptionally Delicious Cajun Shrimp Pasta (Dairy Free!) Recipe

Salt and pepper

Soak the cashews

Place the cashews in a small heatproof bowl and cover with just-boiled water. Set aside to soak for 15-30 minutes until they become pale and plump. You can proceed with the next steps while soaking.

Cook the pasta

Bring a large pot of generously salted water to a boil. Add the gluten-free spaghetti and cook according to package instructions, but drain the pasta about 2 minutes before it’s fully done to allow it to finish cooking later with the sauce. Reserve approximately 3/4 cup of the pasta cooking water and set the pasta aside.

Prepare the Cajun spice mix

In a small bowl, combine 1 teaspoon kosher salt, 1/2 teaspoon black pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1 teaspoon paprika, 1/4 teaspoon dried thyme, and a pinch of cayenne pepper if using. Mix well.

Cook the shrimp

Pat the raw shrimp dry with paper towels to remove excess moisture. Toss the shrimp in a medium bowl with 1 1/2 teaspoons of the prepared Cajun seasoning to coat evenly. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the shrimp and cook for 3-4 minutes, turning occasionally, until just cooked through and opaque. Remove the shrimp to a plate, leaving any oil and brown bits in the pan.

Sauté vegetables and aromatics

Reduce the skillet heat to medium and add the remaining 1 tablespoon of olive oil. Add the diced onion, sliced red and orange bell peppers, and chopped garlic. Sauté for 3-4 minutes until the vegetables are tender. Stir in the remaining Cajun seasoning and tomato paste and cook for an additional 1-2 minutes, stirring frequently to combine. Remove from heat.

Make the cashew cream sauce

Drain the soaked cashews and add them to a blender with 1 1/2 cups of chicken broth and 2 tablespoons nutritional yeast. Blend on high for 1-2 minutes until completely smooth and creamy with no cashew pieces remaining.

Combine pasta, shrimp, and sauce

Return the vegetable and spice mixture skillet to medium-low heat. Add the par-cooked pasta, cooked shrimp, and the cashew cream sauce to the skillet. Stir gently to combine, scraping up any browned bits from the bottom to infuse flavor. Simmer gently, tossing occasionally, until the sauce thickens enough to coat the pasta and the noodles finish cooking to al dente. If the mixture becomes too thick, gradually add reserved pasta water to adjust to desired consistency.

Season and serve
