Quick & Easy Gremolata

This recipe is a great way to pack in some extra veg as the cauliflower is barely recognisable when  blended into the cheese sauce!

Cauli Mac 'n' Cheese | Slimming &amp; Weight Watchers Friendly

cauliflower (leaves removed)

400 g macaroni pasta

bacon

g low fat cream cheese

g reduced fat cheddar

g Parmesan

vegetable stock cube (made

tbsp buffalo sauce

low calorie cooking spray

Boil

Spray

Spray a frying pan with low calorie cooking spray and fry the bacon for a few minutes until crisp. Place on a plate and set to one side.

Put 1/4 of the cauliflower aside and blitz the remaining 3/4 of the cauliflower until it looks like cauliflower rice. Place the blitzed cauliflower to one side.

Wipe

Wipe out your frying pan, spray with low calorie cooking spray and then sauté the onion and garlic on a medium heat.

Once the onion begins to brown, mix in the blitzed cauliflower.

Make

Make up the stock and, alongside the mustard powder, add to the frying pan. Turn the heat down so that the pan is gently simmering and simmer for around 15 minutes.

Add the pasta to the pan of water and cook as per the instructions on the packet. 5 minutes before the end of the cook time, add the remaining pieces of cauliflower that you set aside earlier (not the blitzed cauliflower!).

Drain

Once the pasta and cauliflower are cooked, drain well, reserving a few tablespoons of the water in a cup. Return to the pan and set aside.

Stir

Stir the cream cheese into the cauliflower mix, alongside half of the cheddar and parmesan. Tip the whole mix into a blender and then blitz until smooth (it should be the consistency of cheese sauce). This might take a couple of minutes. If your sauce is too thick, then just add a little of the pasta water that you reserved earlier to thin it out a little.

Pour

Pour the cheese sauce over the pasta and stir in the tablespoon of buffalo sauce and the cooked bacon.

Pour into an ovenproof dish and sprinkle the remaining parmesan and cheddar mix evenly over the top.

Place

Place under a hot grill until the cheese has melted and is golden brown.

Cauli Mac 'n' Cheese - Pinch of Nom

A lovely combination of cauliflower cheese and quiche Lorraine - make sure you pick the freshest cauli around

Cauliflower cheese & bacon quiche

plain flour

unsalted butter

water

cauliflower

thick-cut unsmoked streaky bacon

eggs

carton double cream

cheese

tbsp snipped chives

To make the pastry, briefly whizz the flour with a pinch of salt in a food processor, then add the butter and whizz until the mixture looks like breadcrumbs. Whisk the egg yolk with 2 tbsp water and pour in. Process until the pastry forms a ball round the spindle, add a 1&frasl;2-1 tbsp water if necessary. Pat into a thick disc, wrap in cling film and chill for 30 minutes or up to 48 hours.

Return the pastry to a cool room temperature. Roll out as thinly as you can and line a 4cm deep, 23cm round tart tin with a removable base. Tuck pastry into the corners, without stretching it, and trim off the overhang (<a href="/videos/techniques/how-roll-pastry" target="_blank">watch our video which shows how to do this neatly</a>). Chill for 30 minutes.

Meanwhile, preheat the oven to fan 170C/conventional 190C/gas 5. Line the pastry with foil (no need to prick pastry), weigh it down with ceramic or dried beans, then bake for 12-15 minutes. Remove foil and beans, and cook for another 5-7 minutes until the pastry has lost all rawness but is still pale golden.

Meanwhile, bring a saucepan of salted water to boil, add the cauliflower and cook for 5 minutes, timed from when the water&rsquo;s back to the boil. Drain well and leave to cool.

Spread out the bacon in a cold non-stick frying pan and cook over a low-medium heat for 7-8 minutes, stirring occasionally, until the fat runs and the bacon&rsquo;s coloured but not crisp. Leave to cool.

Combine eggs, cream, all the cheese, chives and nutmeg with black pepper and a little salt. Stir in the cauliflower and bacon, then pour the mixture into the case. Bake for 30 minutes or until the pastry is golden and the filling is set but just trembles. Leave for 30 minutes, as quiche is at its best served warm.
