Dreamy Vegan Cauliflower Alfredo

olive oil

white onion, chopped

garlic cloves, crushed

cauliflower

vegetable stock

nutritional yeast (see notes)

lemon juice

sea salt (I

soy sauce (sub coco aminos for paleo)

butter

Heat the oil in a medium-sized pot over medium-high heat. Add the onion and let it cook for 3-4 minutes, or until it is soft and translucent. Add the garlic and cook for 30 seconds. Add the cauliflower and the vegetable stock or water to the pot, cover with a lid and let the cauliflower steam for 5 minutes, or until it is soft.

Transfer the cauliflower to a blender (I love my Vitamix, but any blender will work) and blend on high until smooth. Add the remaining ingredients (starting with 1 tablespoon of nutritional yeast and 1 teaspoon of sea salt) and blend again. Taste and add more nutritional yeast and sea salt, if you&#8217;d like. If you are using the optional butter add it now and blend once more.

Either use the Dreamy Vegan Cauliflower Alfredo right away or pour it into a pan to keep warm until you are ready to use it.

This is my go-to creamy white sauce now that I’m doing my best to eat WFPB (whole food plant based). Now that I have the basic recipe down pat, I’ve been adding different flavors and experimenting. It’s amazing. Tonight I added roasted red peppers and had it with pasta and diced veggies. I made a white vegetable lasagna with it for my daughter-in-law’s birthday last week and it was a big hit as well. Good stuff. Make it ASAP (you won’t regret it). Oh and my omnivore hubs laps it up every time I serve it. That should tell you how good it is!   

Loved this recipe! I've made my fair share of cauliflower Alfredo sauces and this one is my favourite by far! I followed the recipe exactly, only adding in 1 tbsp of the nutritional yeast. I'll definitely be making this again!

I made the sauce  few minutes ago but it was so good that I just kept eating it out of the blender.  Hardly any left to use at  dinner.  One substitution I made was add 1 1/2 Tbls. of Mocha Mix (non-dairy creamer) instead of water to thin the sauce down a little.  That made the sauce even creamier and luscious. 

I might have to make a little more sauce for dessert.  ;-)

I really don't like cauliflower, I have tried it in a myriad of ways bc as a vegan I like to keep my options as open as possible. Cut to making this recipe and it was AMAZING. I finally found a way to not only eat it but LOVE IT.

I do have a question! How well does this recipe freeze? I'd like to premix a huge batch and freeze it for later, but I also didn't want to go in blind in case it doesn't go well :) thanks!

This sauce was very tasty.  Although it slightly resembled cheese sauce it was still a great tasting sauce.  I had it on steamed broccoli and it was delicious.  I ended up adding  3 tbsp of nutritional  yeast

We followed the directions as written. I doubled the recipe for a bunch of hungry young adults. Everyone enjoyed it and most went back for seconds. They agreed that it was yummy but not really an alfredo. I wonder if I did something wrong. They loved the texture but thought it could use some more flavor. I'm planning on roasting some garlic to add to the leftover sauce to see if they think that puts it over the top.  Thanks for the inspiration. These kids are tough to please and they devoured it.

I've been looking for a non-dairy sub for white sauce and omg I was so surprised at how good this turned out!  The only sub I made was that I used chicken stock instead of vegetable. It was so good! I could just eat a whole bowl of this.

I was pleasantly surprised by how good this tasted! 
I served it cold with pasta and my family and I loved it. It’s such a versatile recipe so I’ll be making it again and adapting it for other recipes!

I LOVE this recipe. It's a great 'base' recipe that can be used in so many ways. I use it to replace any white sauce or cream in soups.

Okay, I don't think I have ever reviewed a recipe before, but I HAD to review this one. This was amazing. I in no way expected this to taste anything like alfredo sauce. My expectations were for a rich cauliflower sauce that tasted good, but only slightly resembled alfredo sauce. But this sauce was so good and tasted so much like alfredo sauce!!! I think the soy sauce/coconut aminos were just as important as the nutritional yeast. I would not skip it.  Thanks for sharing. ♥️♥️♥️

This sauce was so easy to make and really delicious. I skipped the oil and optional butter and it was still so good. I used the 2 tsp of salt as suggested and was a little worried when I tasted the sauce on its own that it might be too salty but when I put over pasta and veggies it was seasoned perfectly. I didn’t have to add any additional seasoning to my plate. Thank you for such a great recipe. 

Good, though I'd not mistake it for either alfredo or bechamel sauce. Maybe some miso  instead lemon juice, to sub for parmesan?

I had two heads of cauliflower. One, for this recipe. The other I had intended to roast in the oven for later. But this sauce turned out SO amazing that I immediately used the other cauliflower to make a second batch. Lunch tomorrow is going to be such a treat!

This CAULIFLOWER ALFREDO SAUCE is a healthy pasta topped, made from pureed cauliflower! It's deceptively easy and delicious, while being vegan and paleo friendly.

Cauliflower Alfredo (Vegan & Nut-free)

extra virgin olive oil

garlic (, minced)

cauliflower florets ((about 3 cups))

water

fine Himalayan salt (,

black pepper (,

Saute the minced garlic in the oil in a small saucepan over low heat. Allow to cook for a few minutes, until the garlic is tender and fragrant, but not browned.

Add the 1 cup of water to the saucepan, along with the cauliflower, and bring the water to a boil. (The water will not cover the cauliflower, and that's okay.) Once the water is boiling, lower the heat to a simmer and cover the pot to cook until the cauliflower is fork-tender and very soft, about 10 to 15 minutes.

Transfer the entire contents of the saucepan into a blender or food processor, and season with salt and pepper. Process until very smooth and creamy, with a texture similar to traditional cream sauce. (Always be careful when blending hot liquids-- the steam pressure can blow the lid off your blender. Cover the vent in your blender lid with a thin kitchen towel to allow venting.)

Season with additional salt and pepper, if desired, and serve hot over your favorite pasta.

Cauliflower Alfredo sauce is a creamy vegan, gluten-free, nut-free homemade Alfredo sauce with less fat &amp; less calories as compared with the original recipe

Cauliflower Alfredo

cauliflower florets

garlic (minced)

plant-based milk (or vegetable broth)

salt

white pepper (or black pepper)

fettuccine (or other pasta of choice)

Bring a large pot of boiling water to a boil. Add the cauliflower and cook, covered, for 8-10 minutes or until cauliflower is fork tender. Reserve 1 cup of the boiling water.

Heat the olive oil a large skillet over medium heat, sauté the minced garlic until soft and fragrant, but not browned, about 1-2 minutes.

Use a slotted spoon to transfer the cooked cauliflower to a blender. Add the sautéed garlic, reserved 1 cup cooking liquid, milk, salt and pepper. Cover the vent in your blender lid with a thin kitchen towel to allow venting and puree until the sauce is smooth and creamy, about 1 minute. If the sauce starts to look dry, add a few drops of water, milk, or olive oil.

Serve with cooked fettuccine

Cauliflower Alfredo sauce is a creamy vegan, gluten-free, nut-free homemade Alfredo sauce with less fat & less calories as compared with the original recipe

This quick &amp; easy Skinny Fettuccine Cauliflower Alfredo is rich, creamy &amp; delicious. It also happens to be really low in calories &amp; virtually fat free!&nbsp;

Skinny Fettuccine Cauliflower Alfredo

/ ½ medium head of cauliflower

onion

garlic (, finely chopped)

onion powder

salt (, plus more to taste if required)

yeast

vegetable broth

milk

¼ teaspoon smoked paprika

sweet white miso paste (, OPTIONAL)

olive oil (, OPTIONAL)

(4 small packages) NuPasta Fettuccine

Cook the cauliflower until fork tender. I like to steam it but you can boil it if you prefer. Drain and add to a blender.

While the cauliflower is cooking gently sauté the onion until transparent then add the garlic and carry on cooking until it is just starting to turn golden. Remove from the heat and add to a blender.&nbsp;

Add all of the other ingredients to the&nbsp;blender, EXCEPT the milk and fettuccine. The olive oil is optional but makes the sauce glossier if added. The miso is optional but helps the flavour so if you have some please use it. It's still good without though so don't worry too much.&nbsp;

When cooked, drain the cauliflower and add to the other ingredients in the blender then blend until completely smooth. This might take a few minutes, especially if you don't have a high powered blender. Add the milk gradually as needed until the sauce is the consistency you want. You might need slightly more or less than stated.&nbsp;

Remove from the packaging and rinse in a sieve under a running tap for at least 20 seconds.&nbsp;

Add the sauce to a large pan and warm gently. Once hot add the nuPasta Fettuccine. It is already cooked so will only take a minute or two to warm through in the hot sauce. Serve immediately.&nbsp;

IF USING NUPASTA

Bring a large pan of salted boiling water to a rolling boil then drop in the fettuccine and cook as per the packaging instructions.&nbsp;

While it is cooking warm the sauce gently in a pan.&nbsp;

Cook the fettuccine until al dente then drain and return to the pan. Pour as much sauce as you need into the fettuccine and stir gently to coat. Serve immediately.&nbsp;

IF USING DRIED FETTUCCINE

This creamy Cauliflower Alfredo is the perfect way to enjoy your favorite comfort food dinner while sneaking in some extra veggies. You won't even be able to tell it's not the real thing! This homemade pasta sauce is made with tender pieces of cauliflower blended into a deliciously rich and creamy sauce that is so so good.

cauliflower (2 pounds), cut into florets

yellow onion, diced

garlic,

vegetable stock (or chicken stock)

Parmesan cheese, grated

Italian seasoning

black pepper

fettuccine, cooked (about ½ pound uncooked)

fresh parsley, finely chopped (for serving)

Bring a large cooking pot of salted water to a boil. Add the cauliflower florets and turn the heat down to medium. Cook covered for 10 minutes until the cauliflower is soft and tender. When the cauliflower is ready, remove from heat and drain.

While the cauliflower is cooking, melt butter in a skillet over medium heat. Add onion and garlic and sauté until soft, about 2 minutes. Remove from heat and set aside.

In a food processor, add the cooked cauliflower, sautéed onion and garlic, vegetable stock, milk, Parmesan cheese, Italian seasoning, salt and pepper. Puree until smooth and creamy. (You can also add everything in a pot and blend with an immersion blender until smooth).

When ready to serve, transfer the cauliflower alfredo to saucepan or skillet and simmer over medium low heat, stirring occasionally. Add cooked fettuccine and toss well to coat. Top with chopped parsley and serve.
