Cauliflower Grilled Cheese

head cauliflower, (to make about 4 cups processed cauliflower)

eggs, lightly beaten

c. Parmesan

oregano

c. shredded white Cheddar

Its better if you bake the "patties" in the oven 400 degrees for 15 minutes first. It makes the patties whole then you can grill them for the extra crunch.

I followed the recipe, mine did nothing but fall apart.

Just made it and it was delicious. Only thing I should have done is grind the cauliflower more finely

It was tasty but my cauliflower patties fell apart

Try making grill cheese and could not keep it together! Fell apart looked like scrambled eggs. Was to looking forward to making this. Just made with cheese on top.

Delish... My one older daughter liked it. I would make more more often.

They taste fine, but couldn’t make them stick together.  We ate them with a fork.

I was so excited to try this, but it was a disaster.  Went exactly by the recipe and it did nothing but fall apart.  I couldn’t flip so I tried to cook a few minutes more still couldn’t flip- hot mess.  Wouldn’t try again.

This turned out perfect and my young grandchildren really enjoyed them as well as my daughter & I. Will definitely continue making these. However use ur judgement on the ingredients i.e. I only used a half head of califlower with 2 eggs and my own seasoning,  and we were able to pick them up just like a regular grilled cheese sandwich!!

I made these with a 36 month old cheddar and the taste was awesome. For those of you who want it to be like a sandwich, I suggest sticking them in the oven at 400. I experimented with both ways. Love the fried taste from the pan, however I could not keep them together.(Made no difference to me though). I was able to make it more like a sandwich in the oven.

This Cauliflower Grilled Cheese Proves That Bread is Overrated

These Cauliflower Breadsticks are cheesy, won’t crumble when held, and are a delicious low-carb, gluten-free, Keto-friendly, low-calorie breadstick alternative. If anything, this cauliflower cheese bread is MORE decadent with bubbly cheesy and a ‘pizza’-esque taste, and yet a single portion contains just 29 calories and 2g net carbs!

Cauliflower Breadsticks

egg eggs

Mozzarella/Tex Mex cheese (shredded)

tsp black pepper

salt

Marinara sauce

Cooking spray (I use Misto*)

Preheat oven to 375 degrees F. Rinse cauliflower, remove outer leaves and separate into florets with a paring knife. Place cauliflower florets in a food processor and process until "rice" texture. Some coarse chunks are fine.

Place in an ovenproof baking dish (I used Pyrex pie dish) and bake for 20 mins. Remove cooked cauliflower from the oven and transfer to a bowl lined with a tea/linen towel. Let the cauliflower cool down a bit until it is safe to touch, about 15 minutes.

Fold the towel holding by the ends and squeeze the liquid out of the cauliflower "ball" as hard as you can. Be patient and do this a few times until barely any liquid comes out. I squeezed out 1 cup of liquid.

Increase oven T to 450 degrees F. Transfer cauliflower to a mixing bowl along with egg whites, 1/2 cup cheese, herb seasoning, black pepper, pinch of salt and mix to combine.

Transfer cauliflower mixture onto the baking sheet lined with unbleached parchment paper. Flatten with your hands into a rectangle, approximately 9" x 7" size and 1/4" thick.

Bake for 18 minutes, remove from the oven and top with remaining 3/4 cup cheese. Bake for another 5 minutes and then broil until cheese turns golden brown. Cut into 12 breadsticks and serve hot with warm marinara sauce, if desired. P.S. For a lighter version, do not top with cheese.

Using the same idea as cauliflower pizza crust, it's easy to make low carb cheesy breadsticks recipe instead. Simply leave out the pizza sauce!

Cheesy Keto Cauliflower Bread Sticks

cauliflower (riced (about 3.75 ounces))

Monterey jack cheese (freshly grated (about 6 ounces))

eggs (beaten)

sage

thyme

mustard

black pepper (to taste)

parsley (minced (for garnishing))

Remove the base or leaves and cut cauliflower into florets. Rice cauliflower by using a food processor. Cook for about 8 to 10 minutes, you can use a microwave or a toaster oven. Allow to cool.

Pre-heat oven at 450F.

Once riced cauliflower has cooled, place in a kitchen towel and strain the liquid. Transfer to a mixing bowl.

Season cauliflower with sage, oregano, thyme and mustard seed. Mix well.

Season egg with ground black pepper. Pour beaten egg, 3 tablespoon cheese and combine with seasoned cauliflower. Allow for eggs to set at the bottom of the bowl and spoon the excess eggs out.

In a greased baking sheet, spread cauliflower until about 1/4 inch thick, rectagular shape.

For the heart-shaped Cauliflower “Bread” Sticks, use a heart-shaped cookie cutter. 1/2 cup of cauliflower mixture makes about 9 heart-shaped in different sizes. Bake for about 8 to 10 minutes. Top with 1/2 cup cheese and bake in the oven for 5 more minutes or until cheese is melted and golden.

For the remaining 1 cup of cauliflower mixture formed into a rectagular shape, bake for about 10 to 15 minutes. Top with the remaining cheese and bake for 5 to 8 minutes or until cheese is melted and golden in color.

Cool for about 2 to 3 minutes and slice with a pizza cutter.

Garnish with freshly minced parsley. Serve with marinara sauce or with a Creamy Cheese Sauce (see note).
