Creamy Cauliflower Sauce

garlic, minced

butter

cauliflower florets

vegetable broth

salt (more

pepper (more

milk (more

Garlic

Saute the minced garlic with the butter in a large nonstick skillet over low heat. Cook for several minutes or until the garlic is soft and fragrant but not browned (browned or burnt garlic will taste bitter). Remove from heat and set aside.

Cauliflower

Bring the water or vegetable broth to a boil in a large pot. Add the cauliflower and cook, covered, for 7-10 minutes or until cauliflower is fork tender. Do not drain.

Puree

Use a slotted spoon to transfer the cauliflower pieces to the blender. Add 1 cup vegetable broth or cooking liquid, sauteed garlic/butter, salt, pepper, and milk. Blend or puree for several minutes until the sauce is very smooth, adding more broth or milk depending on how thick you want the sauce. You may have to do this in batches depending on the size of your blender. Serve hot! If the sauce starts to look dry, add a few drops of water, milk, or olive oil.

I also use almond or coconut milk.   However, I do like some dairy and like to add the cheese, but you could use goat cheese or soy cheese instead of cow's cheese

I used Unsweetened Coconut milk and it was delicious!!!!

I never comment on these but I want to say I suffer from Candida overgrowth and nightmares from C-ptsd. I'm close to crying because this recipe is cheap, easy, can be vegan and low energy. There is nothing like that I have found that tastes this good and is THIS healthy (just made my first batch with water, Olivio, and almond milk). This is truly a gift - thank you so, so much.💜💜💜🎁💐

I'd say it would freeze extremely well. It's almost like making baby food, and it keeps up to 2 months

I am Vegan so no butter used olive oil and nut milk I could drink this it's that yummy

The Entire. Family. Raved!  A few tweaks to use ingredients on hand, dairy has been causing tummy issues so we've been on a recent search. I used no milk at all, set some of the florets aside to stir into the our rigatoni with the sauce. Yum

I just made cauliflower Alfredo sauce and it was     awesome i could not believe how good it was and i will make that again it is a copy of the real Alfredo sauce for now on i will made my own that is sooooooooooooo  good

Hello! My fiance and I are vegan. Instead of milk, soy, or even almond milk, we puree cashews that have been soaked in water overnight. We make tzatziki sauce this way! We have found that using cashews make sauces much thicker and savory whereas nut milks can make it thinner.

Cavatappi pasta is corkscrew shaped and great with creamy sauces. Serve it with a creamy white sauce, spinach, and sundried tomatoes for an easy dinner! (For a vegan option, use 4 cups Vegan Alfredo Sauce instead of the cauliflower sauce.)

Creamy Cavatappi Pasta

garlic cloves*

cauliflower (1 1/2 to 2 pounds), enough

butter oil

garlic powder

oregano

salt

Parmesan cheese, divided

Delallo cavatappi pasta

baby spinach

Delallo sundried tomatoes, minced

Red pepper flakes (optional)

parsley

Make the cauliflower sauce*

Heat the butter in a large pot over medium heat. Add the cauliflower and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, garlic powder, oregano, and 1/2 teaspoon kosher salt. Bring to a simmer, then cover and cook 6 to 7 minutes on medium high heat until the cauliflower is tender when pierced with a fork.

Meanwhile, make the pasta

Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). When the pasta is just about al dente, add spinach to pasta water in last 45 seconds (it only needs this long to cook). Then drain the pasta and spinach and return to the pot.

Blend the cauliflower sauce

When the cauliflower is cooked (in Step 3), carefully transfer the hot cauliflower and broth mixture to a blender. Blend on high until a smooth sauce forms. Add 1/2 cup Parmesan cheese and an additional 1/2 teaspoon kosher salt, and blend again.

Serve

Once the pasta is done, pour in the cauliflower sauce. Add the chopped sundried tomatoes, the additional 1/4 cup Parmesan cheese, and red pepper flakes (if using). Taste and if desired add salt or fresh ground pepper. Top with parsley and serve. Store leftovers refrigerated (see reheating instructions above.

I enjoyed this and I followed the recipe exactly, but for some reason the cauliflower "sauce" was more like thin mashed potatoes... any idea what happened? Did I not blend it long enough? I popped it in the oven with some breadcrumbs on top to turn it into a casserole instead, but it would be great to be able to make it correctly in the future if you have any thoughts.

This recipe is extraordinary! Easy to make and delicious. My wife is vegetarian and I am a sworn omnivore. This meal was great for both. Thank you for your ideas in the kitchen. You have given me a few wins as the newly commissioned cook in the house.
