Learn how to make these low carb, high fiber Cauliflower Tortillas.&nbsp;These healthy tortillas are so awesome and the perfect grain-free tortilla substitute!

Cauliflower Tortillas

eggs

tbsp fresh cilantro, (chopped)

lime

paprika

tsp cumin

tsp sea salt

black pepper

First, start by preheating your oven to 400 degrees F and lining a rimmed baking sheet with parchment paper.  Then, set it aside.

Using a food processor, we’re going to process a cauliflower that’s been broken into florets.  We’re looking for it to form a texture similar to rice.  Don’t overdue it and make it a mash.

If you don’t have a food processor, you could also use a simple cheese grater to grate the cauliflower into rice.

Lay out the "rice" evenly on the rimmed baking sheet, and place into the oven.

Roast the cauliflower for 20-25 minutes, tossing halfway through, until the cauliflower is tender and starting to brown around the edges of the pan.

Remove from oven and allow to cool.

Once the cauliflower rice is cool enough to handle, place it into a thin clean dish towel or cheesecloth and squeeze out as much excess liquid as you can.  This will be very helpful when it’s time to cook the tortillas because they won’t be super liquidy.  You can just discard the liquid once you’ve gotten as much out as you can.&nbsp;

Transfer the drained cauliflower to a medium mixing bowl, and then add eggs, chopped cilantro, fresh lime zest, paprika, cumin, sea salt, and pepper.  Stir to combine.

Separate the mixture into 8 equal portions.

Using two baking sheets lined with parchment paper, take 4 of the 8 portions and lay them evenly on the baking sheet.&nbsp; Repeat with the remaining 4 portions on a separate sheet.&nbsp; Each baking sheet should have 4 tortillas, since they will spread out larger once pressed.

Using a clean sheet of parchment paper, press down on each ball and carefully spread out to form 8 6-inch tortilla-sized circles.

Then, place in the oven and bake for 5-6 minutes.  They’re ready to flip when you can pretty easily pull them up from the parchment paper.

Then flip them carefully over, and cook for an additional 2-3 minutes, until completely set.  You’ll know they’re done when they begin to curl upwards.

Stack the cooked tortillas and keep them covered with a clean dish towel until you’re ready to eat. The towel will hold in the steam from the cooked tortillas as they cool down, keeping them soft and flexible.

You can also place them in a ziplock bag once they’ve completely cooled and store them in the fridge for unto 4-5 days.

Cauliflower Tortillas (Just 42 Calories!) - Low Carb Tortillas

Great low carb alternative to traditional corn or flour tortillas.

cauliflower ((or two cups riced))

eggs ((Vegans, sub flax eggs))

cilantro

½ medium lime, (juiced and zested)

salt & pepper, (to taste)

Preheat the oven to 375 degrees F., and line a baking sheet with parchment paper.

Trim the cauliflower, cut it into small, uniform pieces, and pulse in a food processor in batches until you get a couscous-like consistency. The finely riced cauliflower should make about 2 cups packed.

Place the cauliflower in a microwave-safe bowl and microwave for 2 minutes, then stir and microwave again for another 2 minutes. If you don't use a microwave, a steamer works just as well.&nbsp; Place the cauliflower in a fine cheesecloth or thin dishtowel and squeeze out as much liquid as possible, being careful not to burn yourself. Dishwashing gloves are suggested as it is very hot.

In a medium bowl, whisk the eggs. Add in cauliflower, cilantro, lime, salt and pepper. Mix until well combined. Use your hands to shape 6 small "tortillas" on the parchment paper.

Bake for 10 minutes, carefully flip each tortilla, and return to the oven for an additional 5 to 7 minutes, or until completely set. Place tortillas on a wire rack to cool slightly.

Heat a medium-sized skillet on medium. Place a baked tortilla in the pan, pressing down slightly, and brown for 1 to 2 minutes on each side. Repeat with remaining tortillas.

Keto Tortilla Recipe with 0 Net Carbs

2.5 Cups (250 grams) Shredded mozarella

Eggs

Tablespoons (50 grams) Oat fiber

Prepare ingredients

Prepare your ingredients to make amazing keto and gluten-free tortillas. That is oat fiber, eggs, and mozzarella.

Heat up mozzarella

On your stove, heat up to mozzarella on medium heat. Using a wooden spoon, gently stir from time to time for all of the cheese to melt. Keep heating up until you have a smooth melted cheese.

Add oat fiber and eggs

Switch the heat off and add oat fiber. Blend it in. Add eggs and mix thoroughly. Keep mixing until you get a combined uniformed smooth dough. If you feel mozzarella needs to be melted again, switch the heat on low and keep blending.

Work out the dough

Once you have the dough similar to my in the video, place it all on a silicone rolling sheet and using your hands keep working the dough. As you see on the video, I stretch and fold the dough several times. Keep stretching and folding until you get a really smooth consistency. The process might take somewhere between 5 to 8 minutes.

Shape tortillas

Once you are happy with the consistency, split your dough into 8 pieces. That is how many I managed to make. If you want to make smaller or larger tortillas, decide on the amount. Using a roller, roll one piece into a round flat sheet. Shape your tortillas using either a round, sharp bowl or anything similar. Place each wrap onto a baking sheet covered with parchment paper. At this time, you can heat the oven to 350 Fahrenheit or 180 Celsius. Once you have all the tortillas ready, place them into a preheated oven and bake the tortillas for 8 to 10 minutes until you see the edges starting to brown. I managed to fit 4 tortillas on each baking sheet.
