No Bake Peanut Butter Cereal Cookies

peanut butter

sugar

corn syrup

vanilla

cereal

chocolate chips

Line a baking sheet with wax paper.

Measure cereal in a large measuring cup or bowl. Set aside.

Melt peanut butter, corn syrup, and sugar over medium heat only until melted and combined.

Remove from heat and add vanilla. Stir.

Pour cereal into peanut butter mixture. Stir.

Add chocolate chips. Gently stir. They will start to malt so if you stir too much they will completely melt into the cookies instead of having whole pieces of chocolate.

Using a cookie scoop drop cookies on prepared baking sheet. If desired you can sprinkle the tops of cookies with sea salt. It's yummy!

No-Bake Cereal Cookies

Frosted Mini Spooners®

cocoa powder

milk

butter (unsalted)

vanilla extract

chocolate

peanut butter chips (optional)

Baking sheet

Line a large baking sheet with parchment paper.

Saucepan

In a medium saucepan, over medium-low heat, add sugar, and cocoa powder with milk and stir until combines.

Butter

Add butter and corn syrup to the saucepan and stir until combined.

Peanut Butter

Mix in peanut butter, and extract and stir until mixture comes to a boil. Remove from heat and set aside for 5 minutes.

Crush

Crush cereal until pieces are broken up into smaller chunks.

Mix chocolate mixture into the cereal and combine.

Cookies

Form cookies using a large spoon. I made mine larger size. They will not be a perfect circle and will look like my images- that is okay.

Chips

Add chips to the tops of the cookies, and gently press in.

Chill

Chill cookies in the refrigerator for at least 45 minutes, but longer is better.

Store

Once cookies are hardened, remove them from the pan and store them in an air-tight container until you are ready to enjoy them.
