A simple delicious Ceviche recipe with fresh fish, cucumber, tomatoes chilies, lime, cilantro, and optional avocado.

Ceviche! 

½ a red onion, very thinly sliced

garlic

black pepper

cilantro

serrano

lime juice limes)

grape

cucumber

olive oil (optional)

semi-firm Avocado, diced, as garnish, optional

Slice the red onion very thinly and salt generously and let stand 15 minutes until it begins to release its liquid (this will remove the bitterness). Rinse well, squeeze dry.

Place fish, garlic, onion, salt, pepper, fresh chilies, and lime juice in a shallow serving bowl, gently mix, and marinate in the refrigerator for at least 30 minutes before serving. The longer you marinate the firmer and more &#8220;cooked&#8221; the fish will become.

Before serving, gently toss in the fresh cilantro, cucumber and tomato and a drizzle of olive oil, gently mix.

Taste for salt and add more if necessary. If adding avocado, gently fold it in at the end, after everything is mixed, making sure to use one that is not too soft.

Make the optional Avocado Sauce ( see notes)

How to Make Ceviche! 

This recipe from Delish.com makes it easy to make shrimp ceviche at home.

Shrimp Ceviche

Kosher salt

shrimp,

limes

orange

c. red onion, diced

jalapeños, minced

c. cucumber,

cherry tomatoes

tbsp. cilantro

mayonnaise

hot sauce

corn tostadas

avocado, sliced

Just made this recipe and it came out delicious! Next time I’ll do it the 2nd way (with just citrus), but I found this recipe last minute and only had enough time to poach the shrimp then let it marinate 1hr in the citrus juice. I didn’t have all the ingredients on hand, but this still came out yummy! (We were missing jalapeños, cucumbers, and orange juice). Again, everything still came out wonderfully! My bf, who has tried ceviche several times but never enjoyed it, really liked this recipe (even with the missing ingredients). And he’s picky. So that’s saying something! Will definitely make again next week and this time with all the ingredients/marinating in citrus juices for 4hrs.

Made this recipe last night for the second time using Mahi Mahi and it was AMAZING.  It takes some work to make, but if you like ceviche this recipe is way worth it.  I marinated my fish for 1 hr. and 30 min. and it blew us all away it was so DEVINE.  The best I've ever had.  Heaven.  Even my 11 year old boy cleaned out his bowl using the tortilla chips and we all went for seconds.  I wish I could make this once a week for my family....   thank you for sharing your recipe Sylvia!!

Ceviche

lime juice (from about 5 to 6 limes)

lemon juice (from 1 lemon)

Roma tomatoes (diced)

avocado (peeled, deseeded and diced)

onion

jalapeno pepper

cilantro (chopped)

salt

Marinate fish

In a glass (non-reactive) bowl, stir together the fish, lime juice, and lemon juice, Cover the bowl and marinate in the fridge for 30 minutes to 4 hours. You&#39;ll notice the fish go opaque as the lime juice &quot;cooks&quot; the fish. The longer you marinate the fish, the more it will cook. See above in the blog post for more information.

Stir ingredients

Remove the fish from the fridge (no need to drain it) and add the tomatoes, cucumber, avocado, red onion, jalapeno pepper, cilantro, and salt. Gently stir to combine.

Serve

Serve it up in individual glasses, on a plate, or with tortilla chips.
