How to make authentic Masala Chai, like they do in India, using whole spices. Vegan and Sugar-Free adaptable.

Masala Chai Recipe 

green cardamom pods

cloves

1-2 star anise (optional)

peppercorns (optional)

water

ginger (or more! skins ok)

cinnamon

black tea

milk almond hemp milk

Lightly crush cardamom pods, whole cloves, star anise and peppercorns, and place in a small pot with 1 cup of water. Add ginger, cinnamon and black tea.  I like to muddle the ginger a bit right in the pot.

Bring to a boil. Turn off heat (don&#8217;t boil the tea, it will get bitter) and let it steep at least 10 minutes&#8230;. or for several hours. The longer, the more flavor!

Add your choice of milk. Bring to a simmer once more, turn off the heat.

Stir in your choice of sweetener, taste, adding more sweetener to taste. If it tastes bitter, you need more sweetener.  Strain into a chai glass or mug.

Authentic Masala Chai

Instant Pot Masala Chai. 4 minutes under pressure to make a phenomenal, authentic chai. Adjust spices and choice to milk to fit your dietary needs.

Instant Pot Masala Chai

teabags

Water

Whole Milk (or non-dairy substitute)

Splenda (or sugar adjust to taste)

Whole Cloves

Cinnamon

fennel seeds

Cardamom Pods

Ginger

Place all ingredients In a heat safe container, preferably one with a spout to ease pouring. Cover the container with foil

In the inner liner of your Instant Pot, place two cups of water, and a trivet. Place the foil-covered pot on the trivet.

Cook on High Pressure for 4 minutes, and allow the pressure to release naturally for 5 minutes. Release remaining pressure.

Strain into two cups and serve.

Place all ingredients in a saucepan at the same time.

Heat until it&#039;s boiling and then turn to a low simmer for 5 minutes, stirring to keep the milk from overflowing.

Turn off the heat, stir, and cover.

Let rest for 5 minutes and when the leaves have settled to the bottom, it is ready to drink.

Strain spices, and serve.

Make your own chai concentrate at home with fresh herbs and spices for more flavor than you've ever experienced!

Chai Concentrate

black tea (0.51)

cinnamon (1.50)

ginger

vanilla (0.14)

sugar (0.08)

Place four cups of water in a medium pot. Add the cinnamon sticks, tea bags, whole cloves and ginger (peel and slice the fresh ginger).

Bring the pot up to a boil, place a lid on top, reduce the heat and simmer for five minutes to make sure it is brewed strong.

Remove the pot from the heat and carefully strain out the tea bags and spices (Place a colander over a bowl and pour it in). Using whole spices not only adds more flavor but makes straining them out much much easier.

While the spiced tea is still hot, stir in the sugar and vanilla. Store the chai concentrate in the refrigerator until you are ready to use.

To make a drink, combine one part chai concentrate with one part milk. Heat and serve!
