Slow-cooked lamb shoulder in chermoula yoghurt recipe

red onions, finely chopped

coriander leaves, chopped,

garlic cloves, thinly sliced

(15 grams) ginger, finely grated

(280 grams) natural yoghurt, plus extra to serve

2.8kg lamb shoulder,

Lebanese cucumbers, finely chopped

roma tomatoes, roughly chopped

Lime wedges & charred flatbread, to serve

tbs cumin

tbs coriander

cinnamon

tsp sweet paprika

tsp each chilli flakes, ground allspice, ground ginger & ground turmeric

tsp each cayenne pepper black peppercorns

5-Minute Chermoula Recipe

fresh parsley, (ends trimmed)

fresh cilantro, (ends trimmed)

garlic

coriander ((ground))

red pepper flakes

paprika

ginger

saffron threads, (optional)

kosher salt

lemon, (juice and zest)

Extra virgin olive oil

In the bowl of a large food processor, add the herbs, garlic, spices, saffron threads, and a big pinch of kosher salt. Add the lemon juice and zest.

Run the food processor to combine, and while it is running, drizzle the olive oil from the top opener. Don&#39;t over-process it, it should have a little texture to it at the end.

Taste and adjust seasoning to your liking.
