Sephardic Charoset Truffles

dates

apricots

golden raisins

pistachios

tbsp honey

Place dates, apricots, raisins, pistachios and honey and place in a food processor.&nbsp;

Pulse for about 2 minutes until the mixture is smooth but still has texture. You may need to break up the sticky mixture a few times if it collects in a ball in the processor.

In a bowl, mix together the sugar and the cinnamon. Form date mixture into balls that are about ¾ inch in diameter. The balls will be sticky and soft. It will be easier to shape them if you wet your hands slightly.

Dry your hands. Dip the balls in the cinnamon sugar and coat thoroughly, and re-roll between your palms to smooth out any rough edges. Serve at room temperature.

Sephardic Style Charoset Bites

Medjool dates, pitted and cut in half lengthwise

grape juice, warm

organic raisins

hazelnuts,

walnuts,

almond flour

Combine dates and warm grape juice in a large bowl. Let it sit for 15 minutes

Combine dates (including soaking grape juice), raisins, and cinnamon in the food processor. Pulse until they're pureed

Transfer to a bowl, add hazelnuts, walnuts, and almond meal and mix until all the ingredients are well incorporated. Depending on the size of the dates and how soft they are you may need to add more almond flour to have the mixture come together to be able to form the Charoset balls.

Working with 1 tablespoon of mixture at a time, gently form balls (you'll get approximately 25) and refrigerate until ready to serve.

I love using port instead of grape juice and adding a splash of orange flower water.

These came out very soupy for me, not really able to make them into balls. I've seen other recipes that use far less liquid and will try reducing the liquid when I make these again. I also tried adding more almond flour which helped some. They taste great! Just too thin of a mixture.

Traditionally served at Passover seder, we had never tried charoset before and fell in love. The apples and honey are sweet with a slight hint of cinnamon. Sweet red wine is not overpowering, it almost adds a light tanginess to the fruit. Walnuts and raisins are the perfect complement to the apples. We tried this with matzo crackers and loved the savory crackers with the sweet fruit mixture. Make sure to prepare this ahead of time. It's even better after chilling for a few hours.

Charoset, made in the Ashkenazi style, is made with apples, raisins and nuts. This easy Passover charoset recipe with grape juice, instead of wine, sweetens this already sweet concoction. One of my favorite foods at our Passover Seder, charoset is something everyone should try!

How To Make Charoset with Grape Juice

c toasted walnuts

t cinnamon

c raisins

grape juice or sweet wine

Toast walnuts for extra flavor. Let cool.

Place everything but raisins, and grape juice or wine into food processor.

Using the on/off motion pulse the food processor until the consistency you like is achieved. Some like bigger chunks but I pulse this until I think it resembles mortar.

Scrape into bowl and add grape juice as needed to sweeten. You can also add extra cinnamon which also naturally sweetens the mixture. Taste for sweetness and then stir in raisins.

Store in an airtight container. If you used juicy apples you may need to drain the juce before serving.
