Fried halloumi salad with charred hispi cabbage

white hispi, pointed

halloumi, sliced

large ripe avocado, sliced

For the slaw

banana shallot

tbsp natural yogurt (or crème fraîche)

tbsp tahini (see Tips)

mint

beetroot,

tin chickpeas,

Mix the shallot/onion and lime juice for the slaw in a non-metallic bowl and set aside to pickle while the cabbage cooks.

Heat the oven to 220°C/200°C fan/gas 7. Put the cabbage wedges on a baking tray, drizzle with 2 tbsp olive oil, then roast for 10 minutes until just charred. Set aside.

Drain the shallot/onion, keeping the liquid, and set aside. Mix together the remaining slaw ingredients with the pickling liquid and some seasoning.

Just before serving, heat the remaining oil in a frying pan over a medium-high heat and fry the halloumi for 1-2 minutes on each side until golden and crisp.

Divide the slaw between serving plates, arrange the hot halloumi on top with the cabbage, shallot/onion, sliced avocado and remaining mint, with lime wedges on the side for squeezing.

This simple recipe is a great go-to side dish. Savory, full of charred umami flavor, and totally versatile. Serve with pork chops, corned beef, burgers, tofu and more.

Charred Cabbage (aka Better Fried Cabbage)

Preheat a large cast-iron skillet over medium-high for 5 minutes.

Meanwhile, cut cabbage in half, top to bottom. Then lay cut-side down and slice crosswise into ½- to ¾-inch planks.

Decrease heat to medium, add 1 tablespoon oil to skillet and swirl to coat, place about 4 cabbage planks in an even layer in skillet. Cook, without moving, until charred on the first side, about 5 minutes; season with salt, flip and continue to cook until charred on second side, 5 more minutes.

Transfer to a platter or shallow bowl and repeat process with remaining oil and cabbage.

Season with salt to taste. Optional, season with pepper to taste.
