Spaghetti Carbonara is fast and easy dinner with just a few ingredients and a luxuriously creamy sauce.

Fill a large pot with water for the pasta and season with salt. Place a lid on the pot and bring it up to a boil over high heat.

While waiting for the water to boil, cut the bacon into small pieces. Cook the bacon in a large skillet over medium-low heat until brown and crispy. Remove the cooked bacon from the skillet, then turn the heat down to low. Mince two cloves of garlic, add them to the warm skillet, and sauté for about one minute or until fragrant and softened, then turn off the heat.

In a medium bowl, whisk together the eggs, 1/2 cup of the Parmesan, and a generous dose of freshly cracked pepper.

The water should be boiling at this point, so add the pasta, stir well, and continue to boil the pasta until al dente. Reserve one cup of the starchy pasta cooking water, then drain the pasta in a colander.

Add 1/4 cup of the reserved pasta water to the skillet that was used to cook the bacon. Stir the warm water in the skillet and dissolve the browned bits from the surface of the skillet. Add the steaming hot drained pasta to the skillet and toss in the bacon liquid in the skillet.

Pour the egg and Parmesan mixture over the hot pasta and immediately begin to stir or toss the pasta. Continue to stir the hot pasta in the egg mixture until a creamy sauce forms. Add the remaining Parmesan, a little more freshly cracked pepper, and the reserved bacon bits, and toss again. If the pasta becomes too thick or dry, add a splash more of the reserved pasta water.

Finally, taste the pasta and adjust the salt, Parmesan, or pepper if needed. Top with a pinch or two of roughly chopped parsley leaves.

Heat the oil in a large saucepan. Sizzle the spring onion whites, pepper, chilli paste and garlic for 5-8 mins until soft and fragrant. Add the thyme, curry powder and spices, then cook for 1 min more, Stir in the tomatoes, then cook for 2 mins to soften slightly.

Crumble in the stock cube, then tip in all the beans and the coconut milk. Simmer for 10 mins. Turn off the heat and stir in most of the spring onion greens, the lime juice and some seasoning. Ladle into bowls and scatter with remaining spring onions just before serving.

שיני שום קצוצות

כפית שטוחה של זנגביל (ג'ינג'ר) קצוץ

כפית של מלח, פלפל, כמון, כורכום, אבקת צ'ילי וגראם מסאלה

300 גרם עדשים ירוקות שהושרו במים במשך מספר שעות

עגבנייה בינונית, חתוכה לקוביות גסות

מטגנים את הבצלים עד שיזהיבו, מוסיפים את הגזר ומטגנים במשך כשתי דקות נוספות.

מוסיפים את השום, הזנגביל והתבלינים. מטגנים במשך דקה ומוסיפים רבע כוס מים. מבשלים כחמש דקות.

מוסיפים את העדשים, העגבנייה, וקרוב לשתי כוסות מים.

מכסים את הסיר ומבשלים במשך כחצי שעה. כדאי לערבב אחת למספר דקות ולהוסיף מים במידת הצורך. אם העדשים לא התרככו מאוד, אפשר לבשל במשך מספר דקות נוספות.

בצל בינוני קצוץ דק

שמן זית או שמן אחר לטיגון

כוס קמח חומוס או קמח עדשים

מלח, פלפל שחור ותבלינים אחרים לפי הטעם (כמו: פפריקה, כמון, כורכום, שום כתוש)

כפות פתיתי שמרי בירה (לא חובה אך מומלץ)

1/2-2/3 כוס מים

מטגנים במחבת את הבצל עם מעט שמן.

בינתיים שמים בקערה את קמח החומוס ומערבבים מעט עם מזלג, למניעת גושים.

מוסיפים לקערה תבלינים ואת פתיתי הבירה ומערבבים.

מוסיפים בהדרגה את המים לקערה וטורפים בעזרת מזלג עד שמגיעים למרקם חלק. שימו לב שהבלילה אמורה לצאת דלילה כדי שהחביתה תהיה דקה ולא דחוסה.

מוסיפים את הבצל המטוגן לקערה ומערבבים.

מחממים שמן במחבת שטוחה ויוצקים את הבלילה לכדי שכבה דקה (מעט יותר מפנקייק).

מכסים מיד ומחלישים את האש.

כאשר החביתה מתחילה להיקרש מלמעלה, הופכים אותה בעזרת תרווד.
