Cheddar Muffins Recipe

all-purpose flour

sugar

baking powder

salt

Cheddar cheese

milk

butter (melted)

Preheat oven to 400º F. Lightly spray muffin tin with baking spray and set aside.

Whisk together the flour, sugar, baking powder, and salt in a large bowl. Add the shredded cheese and gently toss together with the flour mixture.

Stir together the egg, milk, and melted butter in another small bowl. Pour the egg mixture into the flour mixture and stir until just combined.

Spoon the cheese muffin mixture into the prepared muffin pan. Bake until golden brown, 20 to 25 minutes. Serve warm.

Bacon Cheddar Muffins

cheddar cheese

bacon chopped ((or 1-2.5 ounce bag of store-bought real bacon bits))

chives

cayenne pepper

unsalted butter, melted

sour cream

Preheat oven to 375 degrees.

In a large mixing bowl, combine flour, baking powder, cheese, bacon, chives, salt and pepper.

In a separate bowl, combine melted butter, sour cream, and milk.

Combine wet ingredients with dry ingredients. Batter will be thick.

Spoon batter into a greased mini muffin pan.

Bake for 15-20 minutes until muffins are golden and a toothpick inserted near the center comes out clean.

Can I add an egg to the mix, and can I add ricotta cheese to the cupcakes?

Yum! These look awesome! I can't wait to try them out - I like that they are different than most "muffins" and I know my kids will love them, which of course is a priority with my picky ones!
