Whip up a batch of quick and easy Bacon &amp; Cheese Muffins using our famous 6 ingredient savoury muffin recipe. They&#039;re the perfect lunch box snack!

Bacon &amp; Cheese Muffins

(300 grams) self-raising flour

(80 grams) cheese (grated)

butter

(250 grams) milk (full fat)

egg (lightly beaten)

bacon

salt and pepper (to season)

Preheat oven to 180 degrees celsius (fan-forced). Line a 12 hole muffin tin with paper muffin liners (or grease lightly) and set aside. 

Sift the self-raising flour into a large bowl.&nbsp;

Add all the remaining ingredients and gently fold through with a metal spoon until just combined. 

Divide the mixture between the muffin holes and bake for 15-20 minutes or until golden.&nbsp;

Allow to cool in the baking tin for 10 minutes before transferring to a wire rack to cool completely.&nbsp;

Conventional Method

Place the butter into the Thermomix bowl and melt for 3 minutes, Speed 2, 100 degrees. 

Add the chopped bacon and cook for 3 minutes, REVERSE, Speed 2, 100 degrees.

Add the remaining ingredients and mix on Reverse, Speed 3, 10 seconds. Scrape down the sides of the bowl and mix for a further 5 seconds or until combined. 

Divide the mixture between the muffin holes and bake for 15-20 minutes or until golden. 

Allow to cool in the baking tin for 10 minutes before transferring to a wire rack to cool completely. 

Thermomix Method

Recipe video above. They taste like cheesy garlic bread - in muffin form! If you want lovely high domes as pictured, this makes 11 muffins. It's irritating, I know, but such is life. See notes for Add In options!&nbsp;

Savoury Cheese Muffins

salted butter (unsalted + salt)

garlic (, crushed)

cheddar cheese ((Note 1))

plain flour (all purpose flour)

tsp baking powder

tsp baking soda / bi-carb soda ((Note 2))

tsp salt

milk (full

parsley ((Note 3))

Preheat oven to 180C/350F (standard) or 160C/320F (fan).

Place butter and garlic in a microwave proof bowl and melt in 30 second bursts. Mix.

Brush a 12 hole standard muffin tin generously with butter, being sure to slather with some garlic. Reserve some butter to brush tops.

Whisk Dry ingredients in a bowl.

Whisk Wet ingredients in a separate bowl.

Pour Wet into the Dry ingredients bowl. Mix 8 times. Add cheese, mix as few times as possible just to incorporate remaining bits of flour - no more than 7 big stirs (secret to soft muffs).

Divide between 11 holes in muffin in (I use an ice cream scooper). Batter should be thick and fill muffin tin to top (if in ball shape due to scooper, leave as is). See video.

Bake for 22 - 25 minutes or until the muffins are golden and crusty and spring back when touched in the centre.

Remove onto cooling rack, brush with remaining butter (microwave again if needed) and cool slightly before getting stuck into them!

These Parmesan Muffins are cheesy, buttery and so soft! Perfect as a grab and go breakfast, snack or even as a side dish to stew or soup.

Parmesan Cheese Muffins

milk (see notes)

(¼oz or 10 grams) instant yeast packet

sugar

flour

Parmesan cheese (grated)

Salt and pepper (to taste)

dry oregano

thyme leaves

butter (melted)

In a medium bowl, combine the warm milk, sugar and yeast. Cover with a kitchen towel and let it rest for 5 minutes.

In the meantime, combine the flour, parmesan, salt, pepper and herbs in a large bowl. Reserve.

When the yeast is bubbly and smelling like beer, add the egg and melted butter and whisk until well combined.

Pour the liquid mixture into the dry ingredients and stir or whisk until smooth. Do not overmix.

Spray a muffin tin with cooking spray or grease with oil. Pour the batter into the muffin tray, being careful not to fill it all the way to the top. You can sprinkle the muffins with extra parmesan and herbs, if desired.

Cover the tray and let the dough rise for 1 hour.

Preheat oven to 350 degrees F.

Once dough has risen, bake the muffins for 25 to 30 minutes, or until golden brown. Remove from oven and let them cool slightly. Then, remove the muffins from the tray to a cooling rack so they can cool more.

Serve warm!

Savoury muffins filled with broccoli and melted cheese are delicious warmed up for breakfast, as an on-the-go snack, or in lunch-boxes.

Broccoli And Cheese Breakfast Muffins

vegetable oil (for greasing)

240 g flour (2 cups)

baking powder

salt

black pepper (freshly crushed)

240 mls milk (1 cup)

butter (¼ cup, softened

broccoli

cheddar cheese (2 cups, grated)

Preheat oven to 220°C/200°C Fan/425°F. Grease the cups of a muffin tray with 2 tablespoons vegetable oil, or insert paper liners and set aside.

In a small bowl blend 1 medium egg, 240 mls milk and 60 g butter till fully combined and set aside.

In a medium bowl sift in 240 g flour and 3 teaspoons baking powder, add ½ teaspoon salt then mix in the broccoli, 200 g cheddar cheese and ¼ teaspoon black pepper.

Pour the egg mixture into the four and lightly mix everything together till the mixture is moistened but do not beat.

Fill the muffin liners ¾ full with batter and bake for 5 minutes, then turn down the heat to 190°C/170°C Fan/375°F  and bake for a further 13-15 minutes, till golden. Allow to cool for 5 minutes before removing. Best served warm

Preheat the oven to 400 degrees.

Place the ingredients into a mixing bowl, and beat until well combined.

Spoon the batter into 12 sections of a muffin tin that have been well greased or lined with cupcake liners. Fill each one to the top with the batter.

Bake for 15-20 minutes until browned and cooked through.

(60 grams) sour cream (or plain yoghurt (Note 1))

(60 milliliters) vegetable oil

garlic (, minced)

Preheat oven to 180°C/350°F (160°C/320°F fan).

Brush a 12 hole standard muffin tin generously with butter

Add cheese, feta, sun dried tomato, capsicum, olives and green onion. Mix as few times as possible just to incorporate remaining bits of flour - no more than 7 big stirs (secret to soft muffs).

Divide between 12 holes in muffin in (I use an ice cream scooper). Batter should be thick and fill muffin tin slightly mounded (see video)

Bake for 25 minutes or until the muffins are golden and crusty and spring back when touched in the centre.

Cool for 10 minutes, then transfer to cooling rack. Serve warm for optimum experience!

Just delicious! Used  some disappointing (oil free?!) sun dried tomatoes that were otherwise destined for the bin and 2 grated zucchini (fried both in butter as suggested) plus feta and they are truly morish.

Worked out perfectly. Family feedback was "probably the best biscuits ever, amazing texture". I added grated zucchini, cheese, sun dried tomatoes and a little chili. Will make again, looking forward to experimenting with variations.

Fantastic, so tasty. Made as mini muffins cooked for 16 minutes and used local cold pressed Rapeseed oil and oregano leaving out the garlic. Loved by everyone. Great appetiser. Next try will be gluten free.

Made these in mini muffin pans as an appt to take to a party and they were a hit!  I forgot to chop garlic when I was preparing my ingredients so used garlic powder instead and added a little oregano. I was asked if they were pizza muffins as the mix ins were somewhat reminiscent of pizza toppings. Can’t wait to make them again and try some variations to get different flavour profiles. Maybe next time I’ll chop some pepperoni to actually make them pizza muffins.

I have been making muffins for years and this is the best recipe that I've used. I made them in a texan muffin tray as I like large muffins, I cooked them slightly longer than the 25 mins in the recipe. I definitely will be making them again!

I've saved this recipe a while ago and have been meaning to make it and today was the day. It is super easy to make! My only problem was that the muffins were stuck at the muffin tray even though Ihad brushed oil. I was devastated! But managed to get them out (in pieces) and they tasted delicious! Will definitely make them again!
