Make these delicious, pillowy-soft, cheesy Russian cheese pancakes for a delicious breakfast treat. Serve these syrniki with syrup like traditional American pancakes, or with a dollop of sour cream or Greek yogurt and a spoonful of fruit preserves.

Syrniki Recipe (Russian Cheese Pancakes)

lb farmer's cheese

eggs

all purpose flour (, divided)

sugar

salt

raisins

Prepare the batter: In a large bowl, crumble the farmers cheese into little pieces with a fork. Add 2 eggs and mix well. Add ½ cup flour (reserve ⅓ cup for step 2), sugar, and salt. Mix well, using the fork to break apart any clumps of flour or farmer&#39;s cheese. Add raisins, if using. The &#39;batter&#39; will be thick like dough, not like traditional pancake batter.  

Form the syrniki pancakes: Prepare a small bowl with about ⅓ cup flour - you will use it to dredge the pancakes. Scoop out approximately ¼ cup pancake dough at a time. (See recipe notes below)  Use your hands to gently flatten the dough into a small patty. Dredge the pancake with flour on both sides. Shake off the extra flour and set aside until you are ready to cook the syrniki pancakes. 

Cook the syrniki pancakes: In a large skillet, heat 3-4 tablespoons of vegetable oil, and gently place the flour-dredged cheese pancakes into the pan using a spatula. Cook on medium-low heat for about 4-5 minutes per side, or until each side is golden brown. Place on a paper towel to cool.&nbsp;Do not crowd the pancakes - cook them in 2-3 batches if necessary.&nbsp;

To serve, sprinkle with powdered sugar, or drizzle with maple syrup, honey, whipped cream. Or try these syrniki the traditional Russian way - with sour cream and your favorite fruit preserves.&nbsp;

How to make Syrniki - Russian / Ukrainian Cheese Pancakes made from farmer's cheese. These soft, slightly sweet pancakes make a wonderful breakfast when topped with a dollop of Greek yogurt or sour cream and a spoonful of blueberry preserves. This easy recipe is ready in under 30 minutes.

Farmer's Cheese Pancakes

Ukrainian Syrniki Recipe (Cheese Pancakes)

all-purpose flour + 1/2 cup for dredging

Tbsp sugar

tsp salt

tsp baking soda

tsp white vinegar

olive oil

Fresh fruit or jam (sour cream, powdered sugar; whatever you like!)

In a large bowl, mix together cheese, eggs, 3/4 cup flour, sugar and salt.

Place baking soda in a small bowl and add vinegar; give it a stir as it fizzes. Add this mixture to the cheese mix.

With a hand-held electric mixer, mix until uniform consistency. Stir in the raisins with a spoon. It will still have some little cheese clumps.

Heat a large skillet over medium heat, add 2-3 Tbsp extra light olive oil.

Add 1/2 cup flour to a small bowl. Place a heaping tablespoon of flat ice cream scoop of the cheese mixture into the flour. Reach into the bowl and sprinkle flour over the top of the pancake. With Well-floured hands, remove excess flour by gently transferring the pancake from one hand to another.

Once the skillet and oil are hot, place patties directly into the skillet as you mold them. Saute until golden brown, about 3-4 minutes each side, flipping once during cooking.

Transfer to a plate and serve with your favorite toppings like sour cream, fruit and powdered sugar.

Syrniki are pancakes made with farmer (or homemade) cheese. Traditionally syrniki are served with sour cream. I like to serve syrniki with fresh berries and powdered sugar. 

Syrniki (Ukrainian Cheese Pancakes)

453 gr farmer cheese 16 oz

gr sugar

egg room temperature

flour

g salt

vanilla bean paste

In the large bowl, mix farm cheese, egg, white rice flour, powdered sugar (sifted), salt, and vanilla bean paste.

You will need ¼ cup ice cream scoop with a squeeze-release handle. Simply scoop some dough and place it on the table (or cutting board), previously sprinkled with some rice flour. 

Cover a piece of dough with the glass or teacup and circle a few times. Then flip that patty and circle again.

Repeat with the rest of the dough. 

Heat a large skillet over medium heat, add 1-2 tbsp oil or butter.

Once the skillet and oil are hot, place the patties directly into the skillet. Saute until golden brown, about 3-4 minutes on each side. Do not crowd the syrniki, cook them in 3-4 batches if necessary. 

Transfer to a plate and serve with fresh berries. Sprinkle with powdered sugar.
