Keto Popcorn - Cheese Puffs

Cut the cheese into small ¼ inch squares.

Before baking, this recipe must be prepared 24 hrs beforehand

Place on a cookie sheet lined with parchment paper and cover with a clean tea towel (dish towel).&nbsp;

Leave the cheese to dry out for at least 24 hours (you might need to leave it longer if it is humid where you live).

The next day preheat your oven to 200C/390F and bake the cheese for 3-5 minutes until it is puffed up.

Leave to cool for 10 minutes before enjoying.

Whenever you are craving some salty popcorn, make this keto popcorn recipe. There is only 1g net carb in each serving!

Keto Popcorn Cheese Puffs

Cut the cheese into ½ inch cubes and place onto a parchment or silicone mat lined baking sheet.

Cover the cheese with a light kitchen towel and allow it to sit in a dry place for 3 days. You want the cheese to be completely hardened before baking. See note drying in a refrigerator instead.

Preheat the oven to 350 degrees.

Bake the hardened cheese for 5-8 minutes until it pops up like popcorn and gets golden brown on the edges.

Allow the keto popcorn to cool and serve.

I hate saying this, but I am not making this again. I dried the 1/4” cheddar cheese dices by spreading them on a silicone mat on a baking sheet and leaving it in the dishwasher for 5 days, which I use infrequently. The cheese popped, but they made an oily mess inside my oven. The final product was chewy and disappointing.

That led me down a scary path on Google. NZ cheeses don't have dye, never imagined that was a thing. Our dairy cows are all "grass-fed" so "white cheddar" isn't actually a thing. I'm going to give it a go anyway.

These are soooo good and easy to make! I have been looking for a fun and crunchy snack to have, and these are my family's new favorite treat! So simple, so crunchy, so delicious! Definitely a must make!

I was wondering if these would be possible to season?
