Both quick, simple and easy, Shannon Bennett's Welsh rarebit is the ultimate revamp on the fan favourite, the cheese toastie.

unsalted butter

(100 grams) plain flour

(500 milliliters) apple cider

mature cheddar cheese, grated

gruyere cheese, grated

tbs chopped flat-leaf parsley leaves

Worcestershire sauce

eggs, egg

Dijon mustard

(60 milliliters) extra virgin olive oil

g reduced fat mature Cheddar cheese (finely grated)

tbsp mincemeat ((the sweet kind

low calorie cooking spray

Pre-heat

Line

Line a baking tray with foil and spritz with low calorie cooking spray. Set aside.

Spread

Spread the mincemeat onto one side of the bread and then sprinkle the cheese on top.

Place

Place the second piece of bread on top and press down. Spray the top with low calorie cooking spray.

Place into the oven for 5 minutes, or until the cheese has melted and the bread is toasted.

Sighing at what&#8217;s leftover from your Christmas feasting? This quick recipe makes ingenious use of the ends of the cheeseboard, odd nuggets of stuffing and even the last spoonfuls of gravy.

Ultimate Christmas leftover sandwich

olive oil

tbsp cranberry sauce

bacon

leftover stuffing

butter, softened

white bread

tbsp leftover gravy

turkey

leftover cheese,

Heat the oil in a pan over a medium heat. Fry the onion for 10-15 minutes until browned. Add the cranberry sauce and fry for a few minutes more.

Meanwhile, cook the bacon in a frying pan over a medium-high heat for 5 minutes until golden and crisp. Set the bacon aside on kitchen paper, then add the stuffing to the pan. Fry for 3 minutes or until starting to crisp.

Butter one side of each bread slice. Put 2 slices, buttered-side down, on a work surface and top each one with 1 tbsp gravy, then layer each with half the onion, bacon, turkey, stuffing, cheese and remaining gravy. Sandwich with the non-buttered side of the remaining 2 bread slices.

Heat the grill to high. Melt the rest of the butter in a pan on a medium heat and fry both sandwiches for 3-4 minutes on each side until golden, then put under the grill for 5 minutes more until the cheese is oozing.

My best Grilled Cheese Sandwich

grams/ 2 tbsp SALTED butter (,

(heaped) vintage cheddar cheese

Butter bread - Slather both sides of each piece of bread with the butter (yes, all 4 sides!).

Light toast - Heat a heavy-based skillet or frying pan over medium low heat (no oil or butter). Place both pieces of bread in the skillet and lightly toast for 1 minute to warm it through and create a light crust. (When we flip, this gives the cheese a head start).

Pile on cheese - Flip one slice of bread, then pile on the cheddar cheese followed by the mozzarella. Place the other slice of bread on top, with the hot toasted side in contact with the cheese.

Cook 3 minutes - Cook for 3 minutes or until the bread is evenly golden and crisp, pressing down lightly with a spatula every now and then. If it&#39;s browning too quickly, remove remove from the stove to cool down a bit and lower heat.

Flip, 3 minutes - Turn the sandwich over, and cook the other side for 3 minutes or until the bread is golden and the cheese is melted.

Devour - Transfer to cutting board. Cut in half in one swift motion. Admire cheese pull. Devour.

Paneer & cheddar sandwich

sunflower oil

cumin seeds

green chilli, finely chopped

chives,

cheddar, grated

paneer, grated

salted butter,

mango chutney, to serve (optional)

Heat the oil in a pan and add the mustard and cumin seeds. When they start to pop, add the chilli and onion, and cook over medium heat for 10-12 mins until the onions begin to caramelise.

Transfer the cooked chilli and onion to a large bowl, add the chives and both cheeses, then mix well. Season with ½ tsp salt and a pinch of black pepper.

To cook the sandwiches, you can use either a toastie maker or frying pan. Butter a slice of bread and spread with some of the paneer filling, then top with another slice and press gently.

Heat 1 tsp butter in a pan and cook the sandwich over medium heat for 2-3 mins until golden, before flipping it over to cook the other side (add another 1 tsp of butter to the pan if needed). Serve the sandwich straightaway.
