These cheesecake fat bombs are super delicious. In this recipe, I’ll show you how to create a fat bomb that is actually enjoyable to eat, which doesn&#x27;t just taste like coconut or butter.

Cheesecake Fat Bombs

oz Cream Cheese

oz Butter (melted)

Tbsp Erythritol (SoNourished)

tsp Vanilla Extract

Cup Refined Coconut Oil (120 milliliters / 4 fl oz melted)

tsp Erythritol (SoNourished)

tsp Cocoa Powder

For the base: In a medium-sized mixing bowl, beat the cream cheese with the butter until combined.

Add the coconut oil, erythritol and vanilla, and mix until combined.

Divide the mixture between 12 cups of a silicone mini cupcake tray (they should be three-quarters full).

Smooth the top with a small teaspoon. Place in the freezer for 20 minutes until relatively hard on top.

For the top: In a separate bowl, mix the melted coconut oil with the erythritol and cocoa powder. Pour on top of the semi-frozen base layer, and freeze until completely set, about 4 hours.

How To Make Keto Fat Bombs That Don't Taste Like Coconut

These Delicious Vanilla Cheesecake Fat Bombs are high on taste and will give you a long-lasting boost of energy. They're deliciously creamy and taste&nbsp;just like a cheesecake!

Keto Cheesecake Fat Bombs

oz Cream Cheese (softened)

tsp vanilla extract

oz Erythritol

Heavy Cream

Put the cream cheese, vanilla and erythritol in a kitchen aid or put in a bowl and mix with a hand mixer on low speed for 2 minutes, pausing to scrape down the sides of the bowl with a spatula, so as to achieve a smooth consistent texture.

Add half of the Heavy Cream and mix for another 2 minutes. Let the bowl sit for 3-5 minutes as erythritol in its granulated form requires a little extra time to dissolve.

Add the other half of the Heavy Cream and mix on medium speed for 3 minutes until the mixture is thick with firm peaks.

Gently spoon the mixture into a piping bag and pipe into mini cupcake liners. Set in the fridge for at least 1 hour before enjoying.
