Heavy Whipping Cream

blue gel food coloring

Unsweetened Shredded Coconut

Fresh Strawberries

Put the pudding and the heavy whipping cream in a large bowl.

Whisk the ingredients together until they form thick peaks.

Fold in the blue food coloring until there are no longer any streaks.

Add a teaspoon of coconut and a strawberry slice to each bowl for garnishing. Serve chilled.

Creamy berry mousse, fresh berries, and a crisp NILLA wafer crust make up these sweet treats!

Berry Cheesecake Mousse Cups

Place the berries and lemon juice in a small food processor or alternatively in a small mixing bowl. Pulse with a food processor to smash and puree the berries or smash them with a potato masher or a fork until pureed.

Place the cream cheese, sugar, and salt in a mixing bowl and beat with an electric mixer until smooth, about 2 minutes. Add the berry mixture and beat to combine. Add the cream and beat again, until smooth and fluffy, about 3 minutes.

Place the NILLA wafers in a freezer zip-close bag, remove excess air, and seal. Smash with a rolling pin or the flat side of a measuring cup until fine crumbs form. Place the butter in a small glass bowl and melt in the microwave, this should only take about 20 seconds. Add the wafer crumbs to the butter and stir with a fork to combine.&nbsp;

Divide the buttery crumbs into small serving dishes and press lightly with your fingers to form a crust. Spoon the berry mousse mixture over the crusts. Top with NILLA wafers and the berries of your choice. Serve immediately or refrigerate until ready to serve.

Keto Orange Cheesecake Mousse

Water

Dry Packet Sugar-Free Orange Gelatin (0.3 oz pack)

oz Full Fat Cream Cheese (softened)

Cup Heavy Whipping Cream

In a large bowl or stand mixer, beat heavy cream until it turns into whipped topping and set aside

Mix gelatin mix into boiling water and stir until fully dissolved. I just heated my water in a glass measuring cup in the microwave then added the mix right to the cup.

In a large bowl or stand mixer, beat cream cheese until smooth and creamy.

Slowly add in the gelatin mixture into the cream cheese and mix well. 

Now stir in the whipped cream. Be sure not to overbeat it as you want the topping to stay airy.

Place in the fridge to chill for about twenty to thirty minutes before serving.

Top with a spoon of whipped topping, orange slice, and orange zest. (optional)

I have an idea for lowering the sodium in the recipe (it tasted a bit salty)!  Instead of using flavored sugar free gelatin, substitute plain unflavored gelatin (no sodium), and use orange zest and orange flavoring.

Add cream cheese to a bowl. Using a hand mixer or stand mixer, mix until smooth. Add confectioner&#39;s sugar, vanilla extract, and salt and mix to combine. Set aside.

In a separate bowl, add heavy cream. Using the whisk attachment of a hand mixer or stand mixer, whip until medium peaks form. Gently fold whipped cream into cream cheese mixture until evenly incorporated.

Divide mixture into 8 small dessert glasses (about 1/2 heaping cup per serving). Optionally, garnish with fresh fruit and graham crackers.

Refrigerate for at least 1 hour, up to 24 hours, to allow mousse to chill and firm up. Serve cold.
