Begin by removing all the stems from a head of cauliflower. Place the cauliflower florets in an 11x7 baking dish lightly greased with olive oil. Roast the cauliflower for 15 minutes at 400 degrees F.

While the cauliflower is roasting, prepare the cheese sauce. In a small pan combine the butter, garlic, milk, heavy cream, and cream cheese over medium heat. Whisk until the mixture is smooth.

Stir in 1 cup of the cheddar until completely melted. Bring the mixture to a slight simmer until it has thickened.

Loaded Cauliflower Casserole Recipe

Kosher salt and black pepper

Steam the cauliflower until fork tender; approximately 10 minutes. Drain well in a colander.

Preheat oven to 425 degrees. Grease a 9 x 13-inch baking dish.

In a large bowl, combine the cream cheese, sour cream, cheddar cheese, Monterey Jack, garlic powder, and onion powder. Mix until creamy and smooth. Gently stir in cauliflower, 1/2 of the bacon, and chives. Season with kosher salt and black pepper to taste.

Spoon into a casserole dish and top with the remaining bacon. Bake uncovered for 20-25 minutes or until the cheese is melted. Top with remaining chives and serve.

Fantastic! Only change I made was using French Onion sour cream dip because it was on sale :) Hubby, kids, and mother in-law were wowed by this. Hubby even said it was in the top 5 of his favorite dishes I have ever made! (He is a type 1 diabetic and this recipe was perfect for low carb)

Made this for thanksgiving and it was so so so good!!! I initially made this side for my dad who has to watch his carbs so I cut the recipe in half. I’m kicking myself now because it was all gone and now I don’t have leftovers. Definitely will be making it again!! Thanks!

I made this tonight and it is awesome! I am a single person so I cut the recipe in half. I used onion and chive cream cheese spread in place of the cream cheese block, and turkey bacon pieces. Yummy!

So yummy.   I added sautéed onions, mushrooms, and celery.  Then, I  replaced the bacon with Browned ground turkey.  This will be something that I will make again, as my husband said, “Please, do not forget what you did to make this recipe”.  It’s a great comfort food casserole and I served with a simple tomato, cucumber onion side salad.  Healthy alternative with all the flavor as an unhealthy dish that’s so tempting in this quarantined uncertainty.  Thanks for the inspiration!

This tasted great!  I left the cream cheese out over an hour - but maybe it needed longer?  When I put the cheeses, etc. together it seemed like it was the consistency of a cheese ball - and mixing it with the cauliflower was impossible.  I even put it in the mixer and mixed hard - but it still would have smashed up the cauliflower. So I put the cauliflower in the pan and gently spooned the cheese mixture over in small spoonfuls.  I almost added milk - but glad I did not - it was really good.

I did modify the recipe by reducing the cream cheese to 1/2 of a block and reduced the cheese to roughly a cup and used bacon bits (because Im lazy) instead of bacon and it was  still excellent and I also roasted my cauliflower.

We made this last night. Delish! I steamed the cauliflower in my Ninja Foodi. Mixed the cheeses. Didn't have bacon, so I used ham slices. Fried them in the Foodi and added smoked paprika. Then we added smoked paprika to the cheese. Delicious. The next time we will use chopped onion and garlic. And, of course, my husband added chili pepper and hot sauce to his bowl! He was very happy with it! Thank you!

Delicious!  I made this for a dinner party.  I also made a loaded potato casserole for those not on a low carb diet.  However, everyone ate the cauliflower and loved it!  I will be making this at a friends house and wondered if I could use frozen cauliflower as a time saver?

I made this for a potluck earlier in the year.  It was a big hit. No one guessed it was cauliflower. One person asked for the recipe and was so surprised it wasn’t potatoes. I’m making this again tomorrow for Christmas. It will be yummy. Great recipe.

I made this for dinner tonight. It was delicious, but the cauliflower became mush like mashed potatoes. I used raw cauliflower pieces purchased from the produce department. I steamed them for 10 minutes and they seem firmed when I added them to the recipe but then dissolved into the cheese sauce when I baked the casserole for 20 minutes.

Try using whole head of cauliflower cut into good size chunks!
Just blanch!
Fold in with the other ingredients “carefully”
This will help it from getting mushy

I made this for dinner tonight. It’s very good, but I made some changes. I sautéed some onion and garlic and added that to the mixture. I think 3 cups of cheese is too much so I would use only 2 next time. Also, I only added 3 strips of bacon, which seemed like enough to get the flavor.

Thanks for another wonderful recipe.  I have made this many times, and always a hit.  I cook the cauliflower in the microwave for 10 minutes and drain any liquid before adding the rest of the ingredients.  I sometimes add chopped white onion to the cauliflower, sub mayonaise for the cream cheese and smoked sausage for the bacon.  Smoked paprika also gives it a nice flavor.

I used Neufchâtel cheese and low fat sour cream and added panko bread crumbs with melter butter and parsley as a topping and it was ah-mazing! 
Served with a mini spiral sliced ham. Great meal. Thank you!

I do reduce the cheeses to one cup and have used precooked bacon pieces if I don't feel like cooking bacon in addition to the casserole. Still turns out delicious.

This cheesy cauliflower casserole sure doesn't taste like diet food. It's loaded with cheddar, bacon, cream cheese, and sour cream. My kids love this one!

Loaded Cauliflower Casserole

cauliflower florets

cheddar

cream cheese (room temperature)

bacon (fried and crumbled)

green onions

salt

pepper

Preheat oven to 350 degrees. Spray a 9x9 baking dish with non-stick spray.

Add the cauliflower to a large microwave safe bowl along with 1 tablespoon of water. Cover tightly with plastic wrap and microwave for 4 minutes or until cauliflower is soft. Drain liquid from bowl.

Mash cauliflower with a potato masher.

Add the cheddar, cream cheese, and sour cream to the bowl and stir well until the cheese has melted into the cauliflower.

Stir in the bacon, green onions, garlic powder, salt, and pepper.

Spread mixture into prepared baking dish and bake uncovered for 20 minutes.

Serve hot.
