This cheesy taco rice is an easy one pan weeknight dinner recipe the whole family enjoys! Top it with some freshly made Pico de Gallo and enjoy!

Cheesy Taco Rice Skillet Dinner

lb of ground beef

tsp salt and pepper

cayenne

tsp chili powder

cumin (dried cilantro)

onion

garlic

10 oz can of Rotel

tomato sauce

beef broth

long grain white rice (uncooked)

cheddar cheese

tomatoes (diced)

onion (diced)

jalapeño (diced)

cilantro

limes (squeezed)

Salt and pepper

Brown the ground beef in a skillet on medium high heat, add all seasonings, and the onion.

Let that cook until beef is cooked through and onions have softened.

Drain any grease from the skillet.

Add Rotel, tomato sauce, minced garlic, beef broth, and uncooked rice to the skillet.

Stir well, cover with a lid, and cook on medium low heat for about 15-20 minutes or until rice is cooked.

Top with shredded cheddar cheese and let melt or pop in the oven on broil.

Serve and top with fresh pico & tortilla chips. Enjoy!

Chop the tomatoes, onions, and jalapeno.

Add all ingredients to a bowl and stir together. Add in squeezed lime juice, cilantro, and season to taste with salt and pepper.

Put the Pico de Gallo in the refrigerator until the Cheesy Taco Rice is ready. This can also be prepped ahead of time!

It is the first recipe in a long time that my husband, 6yo, and 2 yo all loved! Thank you!

Added 1 can of green chilies and used ground venison. Got ahead of my self and used water instead of broth. Browned meat with garlic and onions   10/10 would recommend

I LOVE this recipe! I saw it awhile back, tried it once and we've been eating it almost every week since then. Super easy and delicious to make!
