Cheesy Ground Beef Taco Skillet (Keto, Low-Carb)

Taco Seasoning

tomatoes (drained)

cheddar cheese (or Mexican cheese blend)

cilantro (finely minced)

cauliflower Rice (optional)

Sauté

Warm butter in a skillet over medium heat. Sauté onion and bell pepper for about 5 minutes until soft.

Cook

Add the ground beef and taco seasoning to the skillet. Break the meat apart with a spatula as needed. Cook while occasionally stirring, about 5 minutes to lightly brown the meat.

Mix tomatoes into the meat. Bring the liquid to a simmer. Continue cooking everything for another minute or two.

Serve

Reduce the heat to low. Sprinkle cheese evenly over the meat. Cover the skillet with a lid and continue warming until the cheese melts completely. Remove from heat and garnish with cilantro. Serve warm with optional Cauliflower Rice.

Cheesy Taco Pasta

garlic (minced)

taco seasoning

tomatoes (undrained, 1 can)

green chilies (undrained)

beef broth (low sodium)

pasta (like rotini or penne, dry)

cheddar cheese (shredded)

salt and pepper (to taste)

green onions (chopped)

sour cream

tomatoes (diced)

black olives (sliced)

Brown the beef.

In a large skillet, cook the ground beef over medium heat until browned. Break it up with a spoon as it cooks. Drain any excess fat.

Add onion and garlic.

Add the chopped onion to the skillet and cook until soft, about 5 minutes. Add the minced garlic and cook for an additional minute.

Add flavors.

Stir in the taco seasoning, diced tomatoes, and green chilies. Mix well to combine.

Add pasta and cook.

Pour in the beef broth and add the uncooked pasta. Stir to combine and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 15 minutes, or until the pasta is tender, stirring occasionally to prevent sticking. Season with salt and pepper to taste.

Mix in cheese.

Remove the skillet from the heat and stir in 1½ cups of the shredded cheese until melted and combined.

Top with cheese.

Top the pasta with the remaining ½ cup of cheese. Cover the skillet for a few minutes to let the cheese melt.

Garnish and serve.

Serve warm, garnished with optional toppings like chopped green onions, a dollop of sour cream, fresh diced tomatoes, or sliced black olives for extra flavor and texture.

We made this recipe last night and it was a big hit! Everyone loved it, they said it reminded them of a Mexican goulash.  Thanks for another great family approved recipe!

Velveeta cheese

Brown ground beef until no pink remains. Drain fat.

Stir in taco seasoning.

Add water, salsa, and pasta. Bring to a boil reduce heat and cover.

Simmer 10 minutes or until pasta is tender adding more water if needed.

Once pasta is tender, add cheese and stir until smooth and creamy.

I've made this twice now. It is a delicious easy meal. Both times I've made it, I doubled the recipe. It turns out great!! I used beef broth instead of water, about 6 cups.

This was tasty. I made a few changes. I used green chili salsa instead of red, added 15 ounce cans of red beans, while corn, and diced tomatoes. I checked the freezer but no beef but it was very tasty without it. I had wanted to crumble corn chips on top but I was out, so I had fresh leftover corn bread which I crumbled on top. Delish!

We made this tonight, and it was very tasty. My 13 yr old daughter was the cook, and the recipe was easy for her to follow. I think we will be having this again sometime soon.

We don't have velveeta in the UK but I subbed it for 200g philadelphia and 100g cheddar/red leicester and it was perfectly velvety and smooth. I discovered your website recently and have cooked a fair few of your recipes and they have all been winners! Yet another one to add to my repertoire.

Made this with chicken and fajita seasoning because i didn't have beef and taco spice. but it was amazing. This may go in the picky little eaters favorite list and she usually hates everthing that isn't a hotdog.

Made this for supper last night and it was a hit! I made it with gluten free noodles and had a can of Rotel that needed to be used so I used that in place of some of the salsa! But such a delicious dish. So happy to have leftovers to enjoy this week! SWP Employee
