Cheesy Ground Beef Taco Skillet (Keto, Low-Carb)

large bell peppers (chopped)

Taco Seasoning

tomatoes (drained)

cheddar cheese (or Mexican cheese blend)

cilantro (finely minced)

cauliflower Rice (optional)

Sauté

Warm butter in a skillet over medium heat. Sauté onion and bell pepper for about 5 minutes until soft.

Cook

Add the ground beef and taco seasoning to the skillet. Break the meat apart with a spatula as needed. Cook while occasionally stirring, about 5 minutes to lightly brown the meat.

Mix tomatoes into the meat. Bring the liquid to a simmer. Continue cooking everything for another minute or two.

Serve

Reduce the heat to low. Sprinkle cheese evenly over the meat. Cover the skillet with a lid and continue warming until the cheese melts completely. Remove from heat and garnish with cilantro. Serve warm with optional Cauliflower Rice.

Cheesy Taco Pasta

garlic (minced)

taco seasoning

tomatoes (undrained, 1 can)

green chilies (undrained)

beef broth (low sodium)

pasta (like rotini or penne, dry)

cheddar cheese (shredded)

salt and pepper (to taste)

green onions (chopped)

sour cream

tomatoes (diced)

black olives (sliced)

Brown the beef.

In a large skillet, cook the ground beef over medium heat until browned. Break it up with a spoon as it cooks. Drain any excess fat.

Add onion and garlic.

Add the chopped onion to the skillet and cook until soft, about 5 minutes. Add the minced garlic and cook for an additional minute.

Add flavors.

Stir in the taco seasoning, diced tomatoes, and green chilies. Mix well to combine.

Add pasta and cook.

Pour in the beef broth and add the uncooked pasta. Stir to combine and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 15 minutes, or until the pasta is tender, stirring occasionally to prevent sticking. Season with salt and pepper to taste.

Mix in cheese.

Remove the skillet from the heat and stir in 1½ cups of the shredded cheese until melted and combined.

Top with cheese.

Top the pasta with the remaining ½ cup of cheese. Cover the skillet for a few minutes to let the cheese melt.

Garnish and serve.

Serve warm, garnished with optional toppings like chopped green onions, a dollop of sour cream, fresh diced tomatoes, or sliced black olives for extra flavor and texture.
