Easy Cherry Cobbler Recipe for the Instant Pot

This easy Cherry Cobbler recipe has delicious (fresh, frozen, or canned) cherries in a warm, tender cake. Serve with vanilla ice cream or whipped cream.

Make Cherry filling: Add sugar, cornstarch, lemon juice, vanilla extract, and almond extract to a saucepan and stir. Add cherries and cook for a few minutes, until sugar is dissolved into a sauce and sauce has slightly thickened. (See notes if using canned or frozen cherries).

Melt butter in pan. Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.

Make the batter: In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture over melted butter in pan and smooth it into an even layer.

Bake: Spoon the cherries and sauce mixture over the batter. (the batter will rise up and over the cherries, while baking.) Sprinkle cinnamon generously over the top. Bake at 350 degrees for 40-45 minutes or until golden brown.

Serve warm, with a scoop of ice cream, if desired.

To get started, preheat your oven to 350°F (175°C).

Pour your cherry pie filling into a 9x13 baking dish and mix with the optional almond extract if desired.

Open the package of prepared sugar cookie dough and crumble it over top of the cherry pie filling. Make sure to cover all of the pie filling in an even, thick layer.

Bake

If desired, sprinkle some apple pie spice over the sugar cookie dough (*see note). Place the baking dish into the oven and bake it at 350°F (175°C), uncovered, for about 40-45 minutes, or until the cookie dough has become a golden-brown color and the juices from the pie filling are bubbling (*see note).

Serve

Once the cobbler is done baking, remove it from the oven and serve warm.

Preheat the oven to 350°F.

In a medium saucepan, combine the cherry, sugar, cornstarch, and lemon juice. Stir well.

Cook over medium heat for 8 to 10 minutes, stirring occasionally, until the juices thicken. Remove from the heat and set aside.

For the Filling:

Set the butter in a 9x13-inch baking dish. Place the baking dish in the oven for about 10 minutes to melt the butter. Remove from the oven and set aside.

Meanwhile, in a medium bowl, whisk together the flour, sugar, baking powder and salt. Make a well in the mixture and add the milk and vanilla. Stir until no dry streaks of flour remain.

Pour the batter into the baking dish over the melted butter. Tilt the pan to allow the batter and butter to settle evenly. Dollop the cherry mixture all over the top.

Bake for 35 to 40 minutes, until the filling is bubbling and the topping is golden brown all over. Let it cool for 10 minutes before serving with a vanilla ice cream.
