Recipe video above. This fresh, juicy salad brings together two of the greatest flavour combinations known to mankind - tomato and basil! The vinaigrette is slightly thickened with mustard so it clings to the tomato better, and a touch of red onion provides some much needed freshness.

Tomato Salad

tomatoes

tbsp cider vinegar ((Note 3 for others))

2.5 tbsp extra virgin olive oil

tsp dijon mustard ((or other non spicy mustard))

salt and pepper

Shake Dressing in a jar. Taste and add more salt or pepper, or oil if you want less tart.

Cut Tomatoes - cut cherry tomatoes / grape tomatoes in half. If using large ones, cut into wedges then bite size pieces.

Place tomatoes, onion and basil in a bowl.

Pour over Dressing. Gently toss and serve immediately.

Slice your cherry tomatoes and mozzarella in half. Place in a large bowl with the sliced onion.

In a small bowl, combine the Primal Kitchen Balsamic dressing, basil, dijon mustard, garlic, salt and pepper.

Pour the balsamic mixture over the tomatoes, mozzarella and onions and gently fold it in until combined.

Allow to marinate for 15-30 minutes before serving.

Halve the cucumber and scoop out the seeds with a spoon. Slice the cucumber into ¼ inch thick half moons.

Place the cucumber, tomatoes, red onion and parsley in a large bowl.

For the vinaigrette, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt and pepper in a small bowl.

Pour the vinaigrette over the vegetables. Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.

Cherry Tomato Salad Recipe

basil (or ½ tablespoon chopped fresh basil )

parsley (or ½ tablespoon chopped fresh parsley)

Rinse the cherry tomatoes well.

Drain all the water and keep them for some minutes so that the water on them dries naturally.

Then, halve the cherry tomatoes which are larger in size keeping the smaller ones intact.

Preparation

In a mixing bowl, take the extra virgin olive oil and apple cider vinegar. 

Sprinkle herbs, sugar, salt and crushed black pepper or black pepper powder. 

Add minced or crushed garlic.

Whisk briskly so that the spices, herbs, oil, vinegar, salt and sugar are mixed evenly.

Add the halved cherry tomatoes.

Toss and mix so that the dressing coats the cherry tomatoes.

Serve Cherry Tomato Salad immediately. Salads, especially tomato salads, are best served fresh. If you are unable to do so, then refrigerate for 1 to 2 hours and serve later. However, on refrigeration, the taste of the salad changes.

While serving, you can even add some grated vegetarian parmesan cheese or some herbs or nuts.

Cherry Tomato and Cucumber Salad

cucumbers

cherry tomatoes (about 2 cups, halved)

red onion (thinly sliced)

tbsp rice vinegar

tbsp balsamic vinegar

tbsp extra virgin olive oil

tbsp lemon juice

tsp sea salt

feta cheese, crumbled (optional)

Slice cucumbers into thirds then into halves, lengthwise. Slice into 1/4 inch half moons and set aside.

In a large mixing bowl, combine cucumbers, tomatoes and red onion.

Whisk together the vinegars, lemon juice, olive oil, sea salt and pepper in a small mixing bowl. Set aside.

Add vinegar mixture to the cucumber mixture and gently toss to coat.

It was delicious. My 2 1/2 year old granddaughter cobbled it up!

We should grow tomatoes and cucumbers so you can make this from scratch :)

Simple yet delicious, this fresh and seasonal Cherry Tomato Salad has a mix of ripe cherry and vine-ripened tomatoes, fresh basil, and an olive oil dressing.

(1 pint) cherry tomatoes (halved)

(1 pound) tomatoes (core removed and chopped)

shallot (1/2 of 1 shallot)

red wine vinegar (or apple cider vinegar)

Cut tomatoes

Cut all the tomatoes into bite-sized pieces and add them to a large bowl.

Add toppings

Sprinkle the minced shallot, garlic, and basil over the tomatoes. Drizzle the olive oil and vinegar evenly on top.

Gently toss everything together until well combined.

Season

Season with salt and pepper as needed (I start with 1/2 teaspoon each). Taste and adjust as needed.

Serve

Serve immediately. This salad is best enjoyed within a couple of hours of making.
