Chesapeake Crab Butter Sauce

lb Jumbo Lump Crabmeat

Stick Butter

tsp Old Bay

tbsp Fresh Parsley

tbsp Minced Shallot

tbsp Minced Garlic

Heavy Cream

over medium heat saute garllic and shallots in 2 tbsp of butter until garlic and shallots have softened. then add in heavy cream and reduce by half

Turn heat to low and then begin whisking in butter 2 tbsp at a time until the sauce is smooth. finally gently fold in the crabmeat, avaid breaking up the lumps as much as possible. finish off the sauce with the parsley. Sauce is complete as soon as the crabmeat is warmed. Do not raise heat or butter will seperate from the sauce

Chesapeake Crab Salad- Better than Crab Cakes

lbs Jumbo Lump Crab

tbsp Scallions (Sliced)

Parsley

Dijon Mustard

tbsp Mayonnaise

tsp Sriracha

Worcestershire sauce

Lemon (Juiced)

pk Pretzel Slider Rolls

tbsp Butter (Melted)

Iceberg Lettuce (Shredded)

In a large bowl add your chopped scallions and parsley along with mustard, mayo, sriracha, old bay, and the juice of one lemon.

Gently pick through the crabmeat looking for any pieces of shell. Try to not break up the lumps as best you can.

Finally, fold together all the ingredients so that the crab meat is well coated. Let chill in the refrigerator for 30 minutes before serving.

Crab Salad

To prepare the sliders brush melted butter on your rolls then lightly dust with old bay and toast under the broiler for about 2 minutes. Keep a close eye on them to make sure the rolls don&#39;t burn.

Pile the crab salad on top then add a layer of lettuce, tomato, or pickles if you like before cutting it into individual sandwiches.
