These chia seed pancakes are easy to make, light and fluffy and one of the most-loved recipes from the blog. Try them topped with banana, berries and pure maple syrup for a delicious vegan breakfast.

Vegan Chia Seed Pancakes

all-purpose flour

tbsp baking powder

tsp sea salt

tbsp chia seeds

maple syrup (or another sweetener of choice, use stevia

almond milk

apple cider vinegar

tsp cinnamon (optional, adds flavour)

tsp pure vanilla extract (optional, adds flavour)

Mix all the dry ingredients together in a bowl.

Add the almond milk, vanilla, maple syrup and ACV and stir until &#8220;just mixed.&#8221;

Let sit for 5-10 minutes so the chia can work it&#8217;s magic.

Cook in approximately 1/4 cup scoops over medium heat in a lightly oiled non-stick pan.

Flip when bubbles appear in the middle of each pancake and edges appear dry and cooked.

Cook for another 3-4 minutes on the other side.

Delightful! Yes to the optional cinnamon and vanilla. I swap white whole wheat for AP flour for some added dietary fiber, and they are still fluffy and so delicious. I like that the chia gives these a decent dose of protein without having to add a processed protein powder.

Great recipe! Easy to whip up and our toddler loved her pancake! 

I followed this recipe to the letter and the pancakes were extremely salty with far too much baking powder! Is 1 tbsp a typo? Also 1 tsp of salt seems a lot. 
Shame they tasted so horrible as it was such a waste of batter and they looked like lovely pancakes. 
I will try again with only 1 tsp of baking powder and a pinch of salt.
