Crock Pot Chicken Alfredo Lasagna is the most easy and amazing recipe! No-cook noodles, chicken, alfredo sauce, garlic and mozarella cheese!

Crock Pot Chicken Alfredo Lasagna

store-bought rotisserie chicken, (diced)

Italian cheese blend

ricotta cheese

(15 ounce) jars cheesy alfredo sauce

water

Italian seasoning

garlic

9-12 lasagna noodles, ((depending on your slow cooker size))

mozzarella cheese

parsley ((optional))

In a bowl combine Italian cheese blend with ricotta cheese. Mixture will be thick.

In a separate bowl, combine both jars of alfredo sauce with water, Italian seasoning and garlic.

Assemble the lasagna layers: Spread 1/4 of the alfredo sauce into the bottom the slow cooker. Arrange 3-4 lasagna noodles on top of the alfredo sauce (break noodles to fit.)

Spread 1/3 of the chicken on top of lasagna noodles.

Then spread 1/3 of the cheese mixture on top of the chicken.

Then repeat these same steps two more times (alfredo sauce, noodles, chicken, cheese mixture.) Try to make sure the alfredo sauce covers to the edge of the noodles.

Finally, top with shredded mozzarella cheese and dried parsley (optional.)

Cover and cook on low for 2 1/2 - 3 hours (or until noodles are tender.)

How to make: Crockpot Chicken Alfredo Lasagna

This easy Chicken Alfredo Lasagna is made with rotisserie chicken, alfredo sauce, and mozzarella cheese. This recipe will please any of your family or friends.

Chicken Alfredo Lasagna

unsalted butter

onion (chopped)

baby spinach

heavy cream

Heat a large skillet to medium-high and add 2 tablespoons of butter along with 2 minced garlic cloves and 1 cup of chopped onion. Cook the onion until it becomes translucent.

Now add 10 ounces of fresh spinach and stir until the spinach wilts.

Then add in 4 cups of heavy cream, 1 ½ cup of grated Parmesan, 15 ounces ricotta cheese, ¼ teaspoons black pepper, 1 ½ teaspoons salt, and 3 cups of shredded rotisserie chicken.

Once the heavy cream comes to a slight simmer, remove it from the heat.

In a 9 x 13 inch deep baking dish add a large spoonful of the chicken Alfredo mixture to coat the bottom of the pan then begin adding in your cooked lasagna noodles. I was able to squeeze in about 5 noodles.

Now add a generous amount of your chicken Alfredo mixture on top of the lasagna noodles and sprinkle on one-third of the shredded mozzarella cheese.

Repeat layering the lasagna noodles, chicken Alfredo, and shredded mozzarella until all 15 of your lasagna noodles are assembled. Now cover the lasagna with foil and bake at 350 degrees Fahrenheit for 35-35 minutes. Then broil uncovered for 2-3 minutes to brown the cheese.

Preheat

Preheat oven to 350°F. Spray an 8x8-inch baking dish with nonstick cooking spray.

Simmer

In a large saucepan over medium heat, melt the butter. Add the onion and cook 4 minutes, or until translucent. Stir in the garlic and flour and cook 30 seconds. Gradually whisk the milk into the pan. Bring to a simmer and cook until thickened. Remove from the heat and stir in the parmesan, cream cheese, chicken, spinach, salt, and pepper. Continue stirring until the spinach is wilted.

In a small bowl, whisk the egg and ricotta until smooth.

Assemble

In the bottom of the baking dish, spread about 1/4 cup sauce. Add 3 noodles over the top, followed by even layers of 1/4 cup ricotta mixture, 1/2 cup sauce, and 2/3 cup mozzarella. Repeat the layers 2 more times and pour any remaining sauce over the top. Sprinkle with additional mozzarella cheese. Cover with foil.

Bake

Bake 35 to 45 minutes, or until the sauce is bubbling. Remove the foil and broil 2 to 3 minutes, or until the cheese is melted.

Cool

 Let cool for 15 to 20 minutes before slicing.

How To Make The Ultimate White Chicken Lasagna

lasagna noodles (NOT no-boil)

mozzarella (4 cups)

unsalted butter (may sub half olive oil)

all-purpose flour (1/3 cup)

chicken broth (low-sodium)

half and half

onion powder

parsley

basil

oregano

tsp kosher salt

thyme

½ tsp black pepper

tsp chicken boullion

½ tsp red pepper flakes

Parmesan cheese (2 cups freshly grated)

¾ oz. Rotisserie chicken (3 cups shredded)

eggs

26 ½ oz. whole milk ricotta cheese (3 cups)

sour cream (1 cup full fat)

Parmesan cheese (1/2 cup freshly grated

nutmeg

artichoke hearts (patted VERY DRY and chopped)

frozen spinach (thawed, chopped, and patted VERY DRY)

NOODLES: Place lasagna noodles into the bottom of a long pan. Pour hot tap water over the noodles until they are submerged. Let them soak while you prep the lasagna – at least 30 minutes. Agitate the noodles with your hands occasionally to prevent them from sticking together.

FILLING: Add all of the Ricotta Filling ingredients to a large bowl and mix until combined. Set aside.

Preheat oven to 350 degrees F.

ALFREDO SAUCE: Melt 5 tablespoons butter in a large skillet over medium heat then whisk in flour and garlic. Cook, while stirring for 2 minutes. Turn heat to low then gradually whisk in half and half, chicken broth and all spices/seasonings.

Bring to a boil, whisking constantly then reduce heat to medium and simmer, whisking occasionally until thickened (but not overly thick), about 5 minutes. Remove from heat and whisk in Parmesan cheese until melted. Stir in chicken until well combined. Add additional milk if needed to thin.

ASSEMBLE: Lightly grease a deep 9x13 pan. Spread 1 cup Alfredo sauce in the bottom of the prepared pan (layer will be thin). Place 4 noodles (dried off) lengthwise and part of a 5th noodle on top to cover. Spread with 1/3 of the ricotta cheese mixture. Top with 1 cup mozzarella cheese.

Repeat these layers 2 more times: Alfredo sauce (use one third of remaining Alfredo per layer, about 2 cups), noodles, ricotta, and mozzarella for a total of 3 complete layers. To finish, top with remaining third Alfredo sauce and remaining mozzarella (1 cup).

BAKE: Cover lasagna with foil and bake in preheated oven for 30 minutes. Remove foil, and bake an additional 30 minutes or until hot and bubbly. Turn the oven to broil (550 degree F) without moving the lasagna. Broil until the top is golden in spots, about 3 minutes, watching closely so it doesn’t burn. Let stand 15 minutes before slicing.

Preheat the oven to 350ºF (177ºC). Spray a deep 9X13-inch baking dish with nonstick cooking spray; set aside.

Stir together all the ingredients for the ricotta filling in a mixing bowl until well combined; set aside.

In a large, high-sided skillet, melt the butter (1/4 cup) over medium-low heat. Add onion (1/4 cup) and garlic (1 tablespoon) and saute until soft, about 8-10 minutes. Sprinkle flour (1/4 cup) over onions and cook, whisking constantly for 1 minute. Remove pan from heat and slowly whisk in half and half (1 1/2 cups) and chicken broth (1 cup) until smooth.

Return skillet to low heat and stir in Parmesan (1/2 cup), salt (1/2 teaspoon), and pepper (1/4 teaspoon), then simmer gently until cheese is melted.

Spread about 1 cup of the sauce on the prepared baking dish. Layer 4 noodles to cover the bottom of the dish, then half the ricotta mixture, half the chicken, 1/3 of the mozzarella, and 1/3 of the sauce. Repeat the layers again. Top with the remaining 4 noodles, then the remaining sauce and remaining cheese.

Cover lasagna with foil and bake in the preheated oven for 30 minutes. Uncover and bake for 20-30 minutes or until the lasagna is bubbly and the cheese is golden.

Assembly:

I have made this recipe twice now for a cafe and added mushrooms but used fresh baby spinach everyone loves it and wants it to stay on the menu.
