Cheesy Chicken Alfredo Pasta Bake

Preheat the oven to 350 degrees F. Set out a 9X13 inch baking dish.

Set a large pot of salted water over high heat. Once boiling, stir in the penne and cook according to the package instructions. Then drain the pasta, reserving 1 cup of pasta water for later use.

Meanwhile, set a second large sauce pot over medium heat. Add the butter. Once melted, whisk in the flour. Then whisk in the minced garlic. Continue to whisk for 1-2 minutes until the roux is golden in color.

Stir in the half &amp; half, Italian seasoning, and bouillon. Once the mixture is hot, stir in 1 cup shredded mozzarella, and 1 cup parmesan cheese. Stir and simmer until the cheese is well incorporated.

The sauce should be thick, but still saucy, not like gravy. If it seems too thick, mix in ½ to 1 cup pasta water. Then mix in the cooked pasta and chicken pieces.

Pour the pasta mix into the baking dish. Spread out evenly. Then sprinkle the remaining 2 cups of mozzarella cheese over the top.

Bake for 20-25 minutes, until the sides are bubbling and the cheese on top is melted with crispy edges. Serve warm.

Cut each chicken breast in half through the center to create two cutlets, four total.

Lightly season both sides with salt, pepper, and paprika.

Heat a large skillet over medium heat, once the pan is hot add the olive oil.

Add the chicken and cook for 6 minutes. Flip over and cook until the internal temperature reaches 160 to 165ºF (71 to 74ºC), about 5 to 7 minutes, turn off the heat.

Rest the chicken for 5 minutes and then slice into ½-inch thick pieces.

Wash and dry the pan to use for making the alfredo sauce.

Bring 3 quarts of water and 1 ½ teaspoon salt to a boil in a large pot.

Add the noodles and cook until al dente, about 10 to 12 minutes, or according to manufacturers directions.

Place noodles in a colander and do not discard water.

While the noodles are cooking, make the alfredo sauce.

Heat a large skillet over medium-low heat.

Add the butter, once melted add the garlic and saute until fragrant, 30 to 60 seconds. Do not brown the butter or garlic.

Add the cream, ½ teaspoon salt, and pepper, stir to combine.

Bring the cream to a simmer over medium heat. Cook, stirring frequently, scraping the sides and bottom of the pan to make sure the cream does not curdle.

Reduce the sauce to about 1 cup, about 10 to 12 minutes. The sauce should be slightly thickened, coating the back of a spoon.

Turn off the heat and stir in the parmesan cheese and nutmeg. If the sauce is too thick, add in some of the pasta water or more cream, a few tablespoons at a time until the desired consistency is reached.

Add the pasta to the sauce, gently tossing to combine.

Divide the pasta among bowls, top with sliced chicken and chopped parsley.

Chicken and Spinach Pasta with Bacon

BACON: Preheat oven to 400 F. Line a large baking sheet with aluminum foil or parchment paper. Arrange bacon strips and bake for 15 minutes. Transfer cooked bacon to a paper towel-lined platter that will absorb extra grease. Crumble the bacon once it's cool enough.

CHICKEN: Paper towel dry chicken breasts, season with Italian seasoning and salt and set aside.

Heat 2 tablespoons of butter to a preheated large deep 12 inch skillet. Add chicken breasts and cook on each side on medium high heat 3-4 minutes until nicely browned (for a total of 6-8 minutes). If chicken is still pink in the center, reduce heat to medium and cook covered for several minutes until no longer pink in the center.&nbsp;

Remove chicken from the pan and cut it into strips.

GARLIC AND SPINACH: Add 2 more tablespoons of butter to the skillet, add chopped garlic and cook for 1-2 minutes until browned and fragrant. Next add fresh spinach and cook until it wilts, about 2 more minutes.

ALFREDO SAUCE: Add heavy cream and bring the mixture to a boil. Add paprika, salt and pepper; and reduce to simmer. Slowly add Parmesan cheese - until the cheese melts and makes the sauce thicker. Add more cheese to reach desired thickness.

PASTA: In the meantime bring a large pot of water to boil, add pasta and cook it according to instructions. Drain the pasta, but do not rinse.

FINAL ASSEMBLY: Add chicken strips and crumbled bacon to the sauce first. Taste the sauce and season with more salt and pepper if necessary. Next, add pasta and stir until pasta is fully coated in sauce.

TO SERVE: Sprinkle with additional grated Parmesan.

Preheat the oven to 375 degrees. Coat a 3 quart baking dish with cooking spray.

Melt the butter in a large pan over medium heat. Add the garlic and cook for 30 seconds. Whisk in the flour and cook for 1 minute.

Season both sides of the chicken breast with Italian seasoning and a pinch of salt.

Heat a large skillet over medium. Once hot, add the cooking oil and swirl to coat the surface. Add the chicken to the skillet and cook for about 7-8 minutes on each side, or until browned on the outside and cooked through.

Remove the chicken to a clean plate and turn the heat under the skillet down to medium-low.

Add the butter and minced garlic to the skillet. Stir and cook the garlic in the melted butter for about two minutes, dissolving the browned bits from the bottom of the skillet as you stir.

Add the heavy cream and whisk to combine, dissolving any remaining browned bits. Allow the cream to come up to a simmer.

While waiting for the cream to simmer, bring a pot of water to a boil for the fettuccine. Once boiling, add the pasta and continue to boil until tender (about 7 minutes). Reserve about ½ cup of the starchy cooking water just before draining the pasta.

Once the cream is simmering, add the grated Parmesan to the skillet. Continue to whisk and stir until the Parmesan has melted into the sauce and the sauce has begun to simmer. Simmer the sauce for a few minutes, or until it becomes slightly thicker. Add salt and pepper to the sauce to taste.

Add the drained pasta to the skillet with the creamy sauce and toss to combine. If the sauce becomes too thick, add a couple of tablespoons of the reserved pasta water and toss to combine with the sauce.

Slice the cooked chicken breasts and serve it atop the creamy pasta. Garnish with chopped parsley, if desired.

Olive Garden Chicken Alfredo Pasta

Boil fettuccine noodles according to package directions in a large pot of heavily salted water. Before draining pasta, reserve 1-2 cups of the pasta water.

Meanwhile, prepare the chicken. Preheat a grill to 400°F (or a grill pan over medium-high heat on the stovetop).

Using paper towels, pat chicken breasts completely dry. Drizzle chicken with olive oil, then season with salt, pepper, and 1 teaspoon of Italian seasoning.

Cook chicken breasts for 4-5 minutes on each side, or until internal temperature at the thickest portion of the breast registers 163°F.  Transfer chicken from the grill to a cutting board and let it rest for at least 5 minutes before slicing.

Melt butter in a saute pan over medium heat.

Add the minced garlic and cook for 1 minute, until fragrant.

Sprinkle the flour over the butter and garlic to create a roux; cook for 1 minute, until bubbly.

Slowly and gradually, whisk the cream and milk into the roux, until a smooth sauce forms. **Do not pour all of the liquid into the pan at one time or the sauce will have clumps of flour in it.

Increase burner heat to bring sauce to a low simmer. Add remaining teaspoon of Italian seasoning, and then the freshly grated cheese, one handful at a time, stirring continuously until smooth. Remove pan from the heat. Season to taste with additional salt and pepper, if desired.

Toss cooked fettuccine with the Alfredo sauce, using the reserved pasta water to loosen the mixture and thin the sauce as needed.

Serve sliced chicken breasts over the Alfredo pasta with a garnish of chopped parsley.

Add the pasta back to the pot and pour the Alfredo Sauce over it. Then add in the chicken, and stir everything together.

Add half of the pasta mixture to a 9x13 baking dish and top with 1 cup mozzarella. Then, add the rest of the pasta mixture to the dish and top with the remaining mozzarella and parmesan cheese. Bake for 20-30 minutes until the cheese is golden and bubbly.
