These easy chicken avocado salad pinwheels are way more fun than a regular sandwich.

Chicken Avocado Roll-Ups

avocados, cubed

lime

c. Shredded chicken

bell peppers, seeds and cores removed, chopped

red onion, chopped

c. Shredded Monterey Jack

c. shredded Cheddar

sour cream

tbsp. finely chopped chives

flour tortillas

Taste great!!! I tried it with no chives and it was delish!! I will definitely share this recipe to others!! :]

Added olives, water chestnuts and a dabble of sour cream with light mayo. DDAAANNGG!

I had the hardest time making this and me and my family didn't even like it there was too much onion and <em>it just wasn't that good tomorrow I'm going to try the chicken lemon wrap instead of this </em>

I substituted chive cream cheese for sour cream and chives, used chopped Costco rotisserie chicken and pico de gallo for our company  picnic.  It was well received.

3 instead of 4 stars only because per previous reviews, it really does need some additions or it would be bland.  But I really, really like it with my fixes & it will be on my permanent rotation!  I added 1/2 tsp each salt & cumin, 1/4 tsp each garlic powder & pepper, & a couple shakes Cayenne.  To reviewer Red Butterfly--the chicken is cooked before shredding.  Raw chicken won't shred.

Chicken Avocado Salad Roll Ups are great appetizers for a party, healthy lunch for kids or light and easy dinner for whole family.

Chicken Avocado Salad Roll Ups

chicken

avocado-

plain Greek yogurt (start with 2 and add more if the salad seems to dry)

lime juice

red onion

green onion-sliced

black pepper-

salt

garlic powder

cilantro

Cheddar cheese

5-6 Tortillas (8 or 10 inch diameter)

NOTES: I had enough filling for 5 tortillas (10 inch diameter). You can use 6 (8 inch) tortillas.

In a large bowl combine all ingredients for Chicken Avocado salad. Stir until evenly blended.

Spread the mixture over tortilla and roll up tightly. Repeat with remaining salad.

Slice with serrated knife into ½ inch slices. You can slice them immediately or refrigerate until firm (about 30 mins). It’s easier to slice when chilled.

Just made this modified - using naan bread as a taco shell. Aaced the cheese for sliced Swiss in the shell and added even more cilantro sprigs to top it off! So good!
