This Chicken Bean Soup is a hearty dish packed with both protein and flavor. A savory chicken and bean stew with a surprise ingredient!

Chicken Bean Soup

olive oil

onion (, chopped)

chicken breasts (,

garlic (, minced)

tbsp chili powder

tbsp cumin

turmeric

cayenne pepper

beans (, 15-ounce size, drained.)

chicken broth

salsa (I used Herdez in medium)

sea salt and fresh pepper

In a large 4-quart soup pot, heat olive oil over medium.

Add onions and chicken pieces, season with sea salt and pepper, and saute until fully chicken is mostly cooked and onions are translucent, approximately 5 -6 minutes.

Stir in the minced garlic along with the dry spices and cook, stirring, for another 2 minutes.

Pour in the drained cans of beans and the broth and still well. Simmer for 30 minutes stirring occasionally.

Add in salsa, stir again and cook for another 5 minutes.

Serve warm.

onion (chopped (about 1/2 cup))

carrots

celery (sliced)

tomatoes (do not drain)

cannellini beans (drained)

dark red kidney beans (drained)

bay leaf

Heat 2 tablespoons of the olive oil in Dutch oven or stockpot over medium heat. Sauté chicken until no longer pink. Remove chicken with slotted spoon to a bowl and set aside.

Add remaining 2 tablespoons of oil to the Dutch oven. Add onion, carrots and celery sauté until they begin to brown, about fifteen minutes.

Puree the canned tomatoes in a food processor until no chunks remain.

Add pureed tomatoes, broth, both cans of beans, parsley and bay leaf to Dutch oven. Bring to a boil then reduce heat and simmer for 15 minutes.

Add chicken and simmer until cooked through, 5-10 minutes. Season with salt and pepper to taste.
