Chicken Broccoli Alfredo

(16 ounces Maika’i Organic Penne Pasta)

broccoli florets (roughly chopped)

avocado oil

chicken

Italian seasoning

pepper

salt

(15 ounces Maika’i Original Alfredo sauce)

mozzarella cheese

Cook pasta according to package directions. 2-3 minutes before the pasta is done add the broccoli and cook until the pasta is al dente and the broccoli has softened. While the pasta is cooking, start on cooking the chicken.

Place a large skillet over medium high heat and add avocado oil. Add chicken, Italian seasoning, pepper, and salt. Cook for 8-10 minutes flipping halfway through, or until lightly browned and a minimum of 165F.

Add pasta, broccoli, Alfredo sauce, and mozzarella to the pan of chicken. Stir gently to combine. Cook until heated through and the cheese has melted. Optionally top with Parmesan cheese and for a little spice red chili flakes.

Serve immediately and ENJOY!

2 cups shredded mozzarella cheese

Directions:

Preheat

Preheat the oven to 375°F. Grease a 13x9-inch casserole dish.

Whisk

In a medium saucepan set over medium-high heat, melt the butter. Whisk in flour for 1 minute until golden.

Stir

Gradually whisk in the half-and-half until the sauce is smooth and thickened. Stir in the cream cheese and Parmesan until melted and incorporated. Stir in the garlic powder, salt, and pepper, then remove from heat.

Transfer

Combine the pasta, broccoli, chicken, and sauce in a large bowl and stir to combine. Transfer mixture to prepared baking dish. Sprinkle with mozzarella.

Bake

Bake for 15 minutes, then broil for 2-3 minutes on high until the cheese is bubbly and browned. Serve warm.

This chicken broccoli alfredo is a classic recipe!  It is creamy, cheesy, flavorful, and hearty.  This dish takes just 30 minutes to make.  Great for busy weeknights!

First, cook the whole wheat pasta according to the package instructions until al dente.  Drain and set aside.

In a large skillet, heat the olive oil over medium-high heat.  Add the chicken pieces and cook for 5 to 7 minutes until they are browned and cooked through. Remove the cooked chicken from the skillet and set aside.

In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.

Sprinkle the whole wheat flour over the garlic in the skillet and whisk it into the oil to create a roux.  Cook for 1 to 2 minutes, stirring constantly, until it becomes lightly golden.
