This Chicken Broccoli Bake is a classic comforting casserole with a healthier twist. It is made with tender chicken and broccoli, whole-wheat pasta, and the most delicious cheese sauce. This is a family-friendly recipe that everyone can enjoy. You can make it ahead for the week or freeze for an easy dinner later in the month.

Chicken Broccoli Bake

dry whole-grain short pasta (elbows, fussili, or penne)

chicken breast

broccoli

chicken broth

milk (1%

flour

garlic

onion powder

dry mustard powder

salt

low fat cream cheese

cheese

cheddar cheese

panko crumbs

salted butter

Preheat the oven to 350 degrees.

Next, bring a large pot of salted water to a boil and cook the pasta for about 5 minutes and drain.

After the pasta is done then add it to the casserole dish. Place the cooked chicken breasts and broccoli on top of the pasta.

Using the same pot, make the cheese sauce. Pour the chicken broth and milk into a medium pan. Wisk in the flour until it’s dissolved. Cook over medium heat until it is thick and bubbly, about 10 minutes or so. This can take more or less time, so just keep an eye on it and wish the sauce consistently to keep the milk or flour from burning at the bottom of the pot.

After the sauce starts to thicken then whisk in the onion powder, granulated garlic, dry mustard powder, salt, and pepper.

Stir in the cream cheese until it melts, about 5-7 minutes.

Slowly stir in the parmesan and shredded cheddar cheese until it melts, about 2-3 minutes. Taste for seasoning and stir in additional salt if you need to.

Pour the cheese mixture over the chicken, broccoli, and pasta. Stir until the sauce coats all of the ingredients. Set aside for a moment.

Into a small microwave-safe bowl, melt one tablespoon of butter in the microwave for about 25 seconds or it melts.

Stir in the panko crumbs into the melted butter. 

Sprinkle the crumb mixture over the top of the casserole.

Bake uncovered for 35 - 45 minutes or until bubbly, and the top is brown.

This creamy, cheesy, low carb Chicken Broccoli Bake is an easy way to get a healthy, keto meal on the table. Use shredded rotisserie in this gluten free cheddar chicken broccoli casserole to make it even easier!

broccoli florets

cream cheese, (softened)

mayonnaise

cheddar

garlic powder

tsp sea salt

tsp pepper

grated cheese, (for the topping the casserole)

Heat the oven to 375, grease a 9 x 9 casserole dish ( I use an avocado spray ) and set aside.

Start by prepping your broccoli. Put a large saucepan with about 2 inches of water over medium-high heat. Once the water is at a rolling boil, add in the broccoli florets. Let them steam for about 2 minutes or until they are fork tender. Drain the water, return the broccoli to the sauce pan and set aside.

In a large mixing bowl combine the softened cream cheese with the mayo and then stir in the seasonings. Add the cheddar, then the cooked and chopped chicken. Finally, stir in the steamed broccoli and blend it all together.

Pour the chicken and broccoli mixture into the prepared casserole dish and sprinkle with the last 1/4 cup of grated cheese.

Place in the oven and bake for 15 minutes. Next, set the oven to broil and broil for 2-3 minutes or until the cheese is bubbling and browning in spots.

Serve warm.

Leftovers keep covered in the fridge for up to three days.

10.5 oz Cream of Chicken Condensed Soup (98% fat-free)

10.5 oz Cream of Broccoli Condensed Soup (98% fat-free)

milk

bread crumbs

tbsp butter

Heat oven to 350 degrees.

Place broccoli and chicken evenly in a greased 13x9 casserole dish.

Wisk to blend milk and both soups together. Pour mixture evenly over the chicken and broccoli.&nbsp;

Top chicken and broccoli mixture with shredded cheese.

Melt butter and mix with breadcrumbs. Sprinkle breadcrumbs&nbsp;over cheese.&nbsp;

Bake 30 minutes until bubbly.&nbsp;
