Grilled Chicken Bruschetta is a summer staple in my house! Basically a caprese made with juicy tomatoes, mozzarella, basil, red onion, garlic and balsamic, a delicious weeknight meal!

Grilled Bruschetta Chicken

tomatoes

garlic (minced)

red onion

basil leaves (chopped)

tbsp extra virgin oil

tbsp balsamic vinegar

kosher salt and fresh cracked pepper

oz part skim mozzarella (diced (omit for whole30, paleo))

chicken cutlets

balsamic vinegar

Combine onion, olive oil, balsamic, 1/4 tsp kosher salt and pepper. Set aside a few minutes.

Chop tomatoes and place in a large bowl. Combine with garlic, basil, onion-balsamic combo and additional 1/8 tsp salt and pepper to taste. Set aside and let it sit at least 10 minutes or as long as overnight.

Toss in the cheese when ready to serve. 

Season chicken with salt and fresh pepper.

Preheat the grill to medium-high, clean and oil the grates to prevent sticking.

Grill the chicken 2 minutes on each side, set aside on a platter and top with bruschetta and serve.

Grilled Chicken Bruschetta

Instant pot bruschetta chicken pasta is a quick and healthy pasta meal that can be made gluten free and dairy free. The homemade bruschetta uses only six fresh ingredients and, when coupled with the seasoned chicken and pasta, makes for a delicious meal any day of the week. With the ease of the instant pot, this fast, no mess pasta, is sure to be a hit!

Instant Pot Bruschetta Chicken Pasta

olive oil

chicken

parsley

oregano

basil

garlic powder

pepper,

salt,

chicken broth

bowtie pasta (cavatappi

parmesan, divided

balsamic glaze to drizzle over top of finished chicken pasta

Roma tomatoes, diced

red onion, finely diced

garlic

lemon juice

Salt and pepper

Set the instant pot to “sauté” mode and add the olive oil to the bottom of the pot. Once hot, place the diced chicken pieces into the instant pot. Sauté for about 2 minutes, and then use tongs to toss or flip them over and sauté an additional 2 minutes

Sprinkle the parsley, oregano, basil, garlic powder, pepper and salt over the chicken and use the tongs to gently toss the chicken pieces to coat them with the spices

Pour the broth and balsamic vinegar over the chicken, and then add in the uncooked pasta. Without stirring, press the pasta down a bit so that the pasta is in an even layer and equally submerged in the broth. Place the lid on the instant pot and set the pressure valve to “sealing”

Cook on manual high pressure for 4 minutes. While the instant pot is coming to pressure and then cooking, prepare your bruschetta. In a medium bowl, combine all of the bruschetta ingredients, stir well, and set aside to marinade

Once the cook time is up do a quick release with the pressure valve and remove the lid

Stir the chicken and pasta and put the instant pot back on sauté mode. If there’s too much liquid left for your liking, keeping it on sauté mode for a few minutes will simmer off some and reduce it

Add in 3/4 cup of the parmesan cheese and stir into the pasta sauce. Turn the instant pot off of sauté mode and then stir in the bruschetta mixture, reserving a bit for topping if desired

Let the pasta sit for 2-3 minutes to allow the tomato mixture to heat up, and the serve. Garnish with optional reserved bruschetta mix, parmesan, fresh sliced basil and balsamic glaze

Love this. Love how fast it came together on a weeknight.  13 year old approved!  My son had multiple servings and deemed this as one of his favorites we have to put on regular rotation.  That is always a big win in my book.  My only negative is: I dont see anywhere that directed me on how to do the balsamic glaze.

Easy Bruschetta Chicken

(260 grams) diced Roma tomatoes (5-6 tomatoes)

garlic, minced

tbsp (9 grams) fresh chopped basil

tsp salt

tsp black pepper

chicken breasts

Italian seasoning

mozzarella cheese

balsamic glaze

In a medium sized bowl, combine the tomatoes, garlic, olive oil, balsamic vinegar, basil, salt and pepper. Stir to combine and set aside.

2. Prepare your chicken breasts. You can pound them to even thickness or leave them as is. Coat the chicken with the olive oil.

3. In a small bowl, combine the Italian seasoning, garlic powder, salt and pepper. Coat the chicken breasts evenly with the seasoning.

3. Grill the chicken over high heat for 6-8 minutes per side or until cooked through.

4. When the chicken is cooked, top each piece with a slice of mozzarella cheese and allow it to melt.

5. Remove the chicken from the grill and let it rest for about 5 minutes. Top the chicken with the tomato basil topping and a drizzle of balsamic glaze and serve.

So delicious! My husband and daughter, both tough critics, loved it as well!! Will definitely be adding to my dinner rotation list :)

Just made this and it was sooo good! My fiancé loved it and we will definitely make it again. We doubled the seasoning on the chicken &amp; used our George Foreman. It was great!

I usually can't please the whole family with one meal, but this one did! I substituted halved cherry tomatoes, which I hand on hand, but otherwise followed the recipe. Very flavorful. I paired it with a Caesar salad and broccoli. So glad I found this easy, delicious dinner idea! Thank you.
