Recipe video above. This homemade Caesar Salad Dressing recipe will rival that of any great restaurant! Anchovy is key to proper flavour in the dressing - every self respecting restaurant uses it, so if you&#039;ve had Caesar Salad out and loved it, you&#039;ve eaten anchovies!Add chicken to make a meal, or serve it straight up the classic way.

Caesar Salad - with homemade Caesar Salad Dressing

mayonnaise ((Hellman's

garlic (, finely minced (use garlic press, if you can))

anchovy

lemon juice

Dijon mustard

Worcestershire sauce

cheese cheese

tsp salt

tsp Black pepper

white bread

garlic (,

olive oil

eggs (, cooked

/ 1lb chicken breast

tsp EACH salt and pepper

Whizz all ingredients in food processor until smooth, starting with 3 tbsp milk.

Taste and adjust salt and pepper as desired, and use milk to get the dressing to the desired consistency. (Note 6)

Set aside for 20 minutes+ to allow flavours to develop.

Dressing

Place bacon into a cold skillet (no oil), then turn onto medium high. Cook until golden, turn, cook other side until golden. Remove onto paper towels, cool, then chop.

Bacon

Preheat oven to 180°C/350°F.

Toast bread in the toaster for 1 minute (or oven for 2 minutes each side) until surface is dried but not browned.,

Rub both sides of each piece of bread with the cut side of the garlic (Note 7).

Remove crust from bread (optional) and cut into cubes - around 1.5 cups. Drizzle with 1 - 2 tbsp olive oil, sprinkle with salt, then bake until golden, shaking the tray once. Sandwich bread will take around 7 minutes, sourdough and similar breads take 12 - 15 min.

Garlic Croutons

Place lettuce in bowl with 1/2 the Dressing. Toss well, taste, then decide if you want more Dressing.

Transfer to serving bowl. (Top with chicken and egg if using) Scatter over with bacon and croutons. Sprinkle with parmesan and serve!

Assemble

Eggs: Place the eggs in a saucepan and cover with water. Place over medium high heat and bring to simmer. Once the water is simmering, turn down to medium (gentle simmer) and cook for 3 min (for soft centres), 4 min for firm yolks and 6 min for hard boiled. Remove eggs, run under cold water for 15 sec then leave submerged in a bowl of cold tap water for 5 min. Peel then set aside. (Note 6)

Chicken: Either pound the chicken to about 1.2cm/ 1/2&quot; even thickness, or slice each breast in half horizontally. Sprinkle both sides with salt and pepper. Use bacon fat remaining in skillet. Cook first side for 5 min, turn then cook the other side for 2 min. Remove, cover loosely with foil and rest for 5 min. Cut into slices.

OPTIONAL EXTRAS - Chicken &amp; Egg

A deliciously hearty and satisfying salad the whole family will enjoy! Made with a lighter Greek yogurt dressing and freshly made croutons. Feel free to use leftover grilled chicken if you've got some and also toss in some halved grape tomatoes for one more layer of fresh flavor.

Chicken Caesar Salad Recipe {Homemade Caesar Dressing}

fat free plain Greek yogurt

anchovy fillets ((about 2 tsp once mashed))

Tbsp full fat mayonnaise

tsp dijon mustard

tsp black pepper

Salt

garlic (, pressed through a garlic crusher)

(16 oz) loaf French bread, 2 days old

salt and black pepper

lb chicken boneless skinless breasts (, grilled

lettuce

parmesan cheese ((about 2 oz))

For the dressing:

Remove larger bones from anchovy fillets. Place in a small mixing bowl and mash to a paste with the back of a spoon. Add in mayonnaise, olive oil, lemon juice, mustard, Worcestershire sauce, pepper salt and garlic and stir until well blended. Whisk in Greek yogurt. Chill in refrigerator while preparing remainder.

For the croutons:

Preheat oven to 375 degrees. Cut bread into slices 1/2-inch t0 3/4-inch thick then cut each slice into cubes. Spread bread cubes into an even layer on a baking sheet and bake 5 minutes. Meanwhile, in a mixing bowl, whisk together olive oil, garlic, salt and pepper.

Remove from oven and move bread cubes closer to center of pan (so they're more side by side), then slowly and evenly drizzle with half of the olive oil mixture and toss. Drizzle with remaining olive oil mixture and toss, then bake 5 - 6 minutes. Remove from oven and toss, then bake 5 - 6 minutes longer or until golden brown and crisp. Remove from oven and allow to cool to room temperature.

To assemble salad:

In a large salad bowl toss together lettuce, chicken, croutons and half of the parmesan. Drizzle with desired amount of dressing and toss. Plate and sprinkle each portion with remaining parmesan. Serve immediately.

Grilled Chicken Caesar Salad (Dairy Free, Paleo, Keto) 

chicken breasts (4 medium)

coriander

extra virgin olive oil

romaine lettuce

Dairy Free Caesar Dressing

pork rinds, chicharrones (I used these)

Heat your grill with the lid closed until it reaches 550F.

In the meantime pat your chicken dry then rub on the dry seasonings and brush with olive oil.

When the grill reaches temperature, open the lid and place the 4 chicken breasts on one side of the grill. Close the lid and cook for 5 minutes.

While those cook, halve your romaine hearts, the long way. When the 5 minutes are up, open the grill and flip the chicken. Cook for 3 minutes.

Open the grill and arrange the romaine hearts cut side down on the grill around the chicken. Cook for 2 minutes. Then remove everything from the grill.

You can plate it all together, family style or chop up the romaine and chicken and toss with &#8220;croutons&#8221; and dressing. Sprinkle with nutritional yeast (the &#8220;cheese).

So good! Made it for lunch the other day.

Easy Chicken Caesar Salad

Salt and black pepper

Marinate the Chicken

In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, garlic, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.

Grill the Chicken

Preheat your grill or pan to medium heat. Grill or pan-sear the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let the chicken rest for 5 minutes before slicing.

Prepare the Dressing

In a mixing bowl, combine egg yolk, Dijon mustard, garlic, and lemon juice. Slowly whisk in the olive oil to emulsify the dressing. Stir in grated Parmesan cheese and anchovy paste (if using). Add salt and black pepper to taste. For a creamier dressing, mix in the mayonnaise.

romaine lettuce (shredded (about 1 large head))

chicken breast (shredded or cubed)

caesar dressing ((up to 1 cup, more or less to taste))

Place all of the ingredients in a large mixing bowl. Toss until evenly coated.

Then squeeze the fresh lemon over the top and give one last toss.

Serve immediately, or can be chilled for up to one hour.

Chicken Breast

Tenderstem Broccoli

Romaine Lettuce

Mayonnaise

Heat the oven to 180°C. Put the two chicken breasts on a tray and drizzle with a little olive oil. Season well and slide into the oven and bake for 20 mins, until cooked through. Set aside until cool.

Tear the bread into chunky croutons, whack on a baking tray and drizzle with olive oil. Season with salt and pepper. Slide into the oven for 15 mins.

Bring a pan of salted water to the boil, drop in the Tenderstem broccoli and cook for 2 mins, then remove and set aside on a plate to cool.

Add the romaine lettuce halves to a board with the cooked chicken, Tenderstem broccoli and parmesan cheese. Chop together, then slide into a large bowl. Combine the dressing ingredients, then add the croutons and capers and drizzle with the dressing. Toss well then tip onto plates. Top with an extra grating of parmesan cheese.

Lovely dressing but I did add a little bit of garlic to it as well.

Really enjoyed this. I usually pan fry the chicken, and was wary of baking it, but it was easier, tastier and less washing up! 
The croutons were delicious and used up some bread that would otherwise have gone in the bin... 

Changes: I used M&S roasted garlic mayonnaise in the dressing and a bit (lot) extra parmesan. I also only used two romaine lettuce (one pack) and it was easily enough.

Delicious dressing, I too added some Greek yogurt and as had no anchovies, added extra Parmesan which worked fine.

We make this almost weekly and it’s incredible every time - have evolved it to use 1/3 mayo and 2/3 Greek yoghurt, add avocado, add crispy onions, shave the Parmesan straight into the salad, and use garlic granules in the dressing

Loved this!! I added some garlic to the sourdough croutons, and they turned out amazing
